Purre er en våre vanlig grønnsaker, men spises sjelden hel. Som regel skjæres den opp og brukes i supper og gryteretter, men den er faktisk veldig god og egner seg like godt til å spises hel. Nå er det nye purrer i butikken. De er tynne og har en veldig delikat smak. De er heller ikke grove i strukturen slik purrene blir senere på sommeren og høsten. Disse egner seg godt å spise hele. Sammen med skarp sennep er det et flott tilbehør til grillet kjøtt eller fisk. Denne dressingen er temmelig skarp. Både vineddik og dijonsennep bidrar med skarpe smaker. Dersom du synes det blir for skarpt kan du redusere mengden sennep.

Ingredienser

  • 8 små purrer
  • 2 ts dijonsennep
  • 2 ts meget grov sennep
  • 3 ss hvitvinseddik
  • 4 ss olivenolje
  • salt og nykvernet pepper
  • 1/2 dl vann
  • evt spiselige blomster

Fremgangsmåte

  • Rens purrene på følgende måte. Skjær av den mørkegrønne toppen av purrene og roten så langt ned som mulig. Del purrene i to på langs, men la dem henge sammen nederst. Rens purrene under rennende vann slik at all jord blir vasket bort.
  • Damp purrene til de er møre. Hvor lang tid det tar avhenger av tykkelsen på purrene, men regn med ca. 5-7 minutter.
  • Legg purrene over på et kjøkkenhåndkle med snittsidene ned og la dem dryppe av seg.
  • Rør sammen sennep og hvitvinseddik. Hell oljen i i en tynn stråle mens du pisker hele tiden. Nå skal du ha en tyktflytende kremet dressing. Pisk inn vann til slutt for å få en tynnere dressing. Smak til med salt og pepper.
  •  Legg purrene på et fat og hell over dressingen.
  • Pynt gjerne med spiselige blomster.

Server straks, eller la purrene bli helt kalde.
