Det er ikke bare til jul at gris og kål er en populær kombinasjon. Også om sommeren når nykålen er struttende lysegrønn er den super sammen med noen gode koteletter. Du kan selvsagt grille kotelettene, men de det har ikke vært det store grillværet i sommer, så her kommer en oppskrift der kotelettene er tilberedt inne i stedet. Kotelettene er først brunet i pannen med masse salvie og deretter stekt ferdige i ovnen. Det gir pent brune koteletter som fortsatt er saftige. Dessuten får de en nydelig stekesjy som bonus. Det får man ikke når kotelettene grilles. Men da kan du jo lage litt urtesmør i stedet. Ved siden av har jeg smørstekt purre og nykål og kokt nypoteter, da. Skikkelig sommer på tallerkenen med andre ord. Tror nesten du må være vegetarianer for å ikke like dette.

Ingredienser

  • 4 koteletter
  • 1 håndfull frisk salvie
  • 2 fedd hvitløk
  • 1 ss rapsolje
  • 1 ss smør
  • 1,5 dl vann / halvparten vann og halvparten hvitvin
  • salt og pepper
  • 1 hode nykål
  • 2 nye purrer
  • smør til steking

Fremgangsmåte

  • Sett ovnen på 150 grader.
  • Sett på potetene.
  • Finhakk det meste av salvien.
  • Varm opp olje og smør i en stekepanne og ha oppi salvien og hvitløken. La det surre et minutt. Ha deretter i kotelettene og stek dem på begge sider til de har blitt pent brune.
  • Legg kotelettene over i en ildfast form og kok pannen ut med vannet eller vann/vinblandingen. Hell stekesjyen over kotelettene og sett inn i ovnen og la dem ettersteke i ca. 15 minutter.
  • I mens, skjær purren i tynne ringer og kålen i strimler.
  • Smelt smøret i en panne og fres purren til den blir myk på middels varme. Tilsett kålen og la det surre under omrøring til kålen også har blitt myk.
