Ute går det nå merkbart mot høst og mørkere tider, men fortsatt står de fleste urtene i hagen og strutter. I hele sommer har jeg hatt luksusen av å gå ut og plukke friske urter til maten vi har hatt. Det blir det snart slutt på og derfor ønsker jeg å samle inn og bevare så mye som mulig av urtene for vinteren. Noen av urtene tørker jeg. Oregano, timian, estragon og sitronverbena egner seg godt til det. De tre første bruker jeg til matlagningen, mens sitronverbenaen bruker jeg til te. Det blir en nydelig te som skal virke oppkvikkende. Noen urter fryser jeg ned som salvie og gressløk, og noen bruker jeg altså til å lage urtesmør med.

Nesten alle slags urter eller blandinger av urter kan brukes. Her er det bare fantasien som setter grenser. Mens jeg om sommeren mikser og matcher etter hva jeg lager akkurat den dagen, liker jeg å holde meg til en, eller maks to urter av gangen når jeg skal lage for å fryse ned. Da synes jeg det blir enklere å bruke i ettertid. Jeg lager heller flere forskjellige blandinger. I dag har jeg laget et klassisk persille og hvitløkssmør. Dette smøret kan brukes til nesten hva som helst synes jeg, men prøv det på grønne bønner. Det er kjempegodt.

Så lager jeg et smør med estragon og sjalottløk, det synes jeg passer veldig godt til biff. Det er jo i bunn og grunn de samme smakene som er i bernaisesausen, og det er jo ikke feil til biff. Men dette smøret er også godt til både kylling og fisk. Til slutt lagde jeg ett med gressløk og brønnkarse. Dette har jeg ikke laget før, men gleder meg til å prøve den litt pepperrotaktige smaken av brønnkarse sammen med laks. Det tror jeg blir en veldig bra kombinasjon.

Ingredienser

  • 100 gr mykt smør
  • 2 fedd hvitløk
  • 3 ss finhakket persille
  • 100 gr mykt smør
  • 1/2 sjalottløk
  • 3 ss finhakket estragon
  • 100 gr mykt smør
  • 2 ss finhakket gressløk
  • 2 ss finhakket brønnkarse

Fremgangsmåte

  • Ta smøret ut av kjøleskapet minst en time før du skal begynne.
  • Skyll urtene og la dem tørke.
  • Finhakk urtene på en fjøl. Legg smøret oppå og arbeid urter og smør sammen med en gaffel.
  • Når det har blitt jevnt fordelt legges smøret på plastfolie.
  • Klem sammen og rull til en pølse på ca. 3 cm i diameter.
  • Sett på navn og frys ned.
  • Når du skal bruke det, kan du bare skjære av en skive eller to om du bare trenger litt, eller du tar hele ut og oppbevarer det i kjøleskapet til det skal brukes.

PS: Husk at smør harskner også i fryseren, så spis det opp i år.
