Jeg elsker å spise små forundringspakker med mat. Det er kanskje en litt barnslig glede ved det, men all matglede er vel bra, også den litt barnslige. Mat som er pakket inn, er så herlig. Man får servert en liten pakke og vet ikke helt hva det er før man tar en bit og innholdet avslører seg. I dag har jeg pakket svinefarse smaksatt med ingredienser fra Kina inn i kålblader. Så egentlig er vel dette bare litt eksotiske kålruletter. Men kålruletter er bra mat det – både norske og mer eksotiske varianter. Faktisk viste et kjapt søk på internett at det er svært vanlig i mange land å lage kålruletter. Konseptet er det samme. En farse pakkes inn i en type blader. Farsen kan lages av alle typer kjøtt, eller være vegetarisk. Bladene kan også variere med mange typer kål eller andre typer blader som fikenblader, vindrueblader og sikker mye annet. Valget mitt falt på savoykål fordi det er lett å få disse bladene hele fra hverandre.

I Kina er det ikke uvanlig å spise mange forskjellige småretter til frokost eller lunsj. De kalles med et felles navn dim sum og slike kålruletter kan være en av dem. Felles for mange dim sum retter er at de dampes. Min oppskrift er på ingen måte autentisk, men jeg har plukket ut råvarer og smaker fra det kinesiske kjøkkenet som jeg synes passer godt sammen.

Jeg har brukt shitakesopp. Det kjøper jeg tørket i en asiatisk butikk. Soppen bløtlegger jeg i varmt vann i 15-20 minutter før den skal brukes. Dersom du ikke får tak i shitakesopp, kan også aromasopp brukes. Da ville jeg frest soppen først i en varm panne for å få ut litt av vannet fra soppen slik at ikke farsen blir får fuktig.

Ingredienser

  • 1 savoykål
  • 400 gr svinekjøttdeig
  • 1 stort fedd hvitløk
  • 1 rød chili
  • 1 toppet ss revet ingefær
  • 5 shitakesopp
  • 2 vårløk
  • 2 ss soyasaus
  • 1 ts sesamolje
  • nykvernet pepper
  • cocktailpinner

Fremgangsmåte

  • Begynn med å klargjøre kålen. Skjær av ett og ett blad av kålhodet. Pass på at bladene er hele. Skyll bladene godt. Kok opp lettsaltet vann i en stor gryte og forvell kålbladene i to minutter. Kok noen få blader av gangen.
  • Ha bladene deretter direkte i iskaldt vann slik at kokeprosessen stopper. Etterpå, legg bladene på et kjøkkenhåndkle slik at de kan dryppe av seg.
  • Finhakk hvitløk, chili, shitakesopp og vårløk. Bland dette, den revne ingefæren med soyasaus og sesamolje godt sammen. Tilsett kjøttdeigen og elt det sammen til en seig masse der alle ingrediensene er godt blandet.
  • Sett dampovnen på 100 % damp og 100 grader.
  • Dersom bladene er store, del dem i to. Legg 1 toppet ts med fyll på et blad og pakk det inn. Brett først en gang over fra kortsiden og brett deretter inn på langsidene. Rull til slutt helt sammen og fest med en cocktailpinne. Det skal bli ca. 20-25 stk.
  • Damp kålrulettene i 10 minutter.

Server varme med soyasaus til å dyppe i. Ris og dampede eller wokede grønnsaker ved siden av smaker godt. Vel bekomme.
