Italiensk mat er definitivt en av mine favoritter. Eller, det er jo feil å si at det er én av favorittene mine, for italiensk mat er jo så mye. Så rettere sagt er det italienske kjøkkenet et av mine favorittkjøkken. Jeg liker filosofien om å bruke de råvarene som er lokale og tilgjengelige og gjøre maksimalt ut av dem, samtidig som hver råvare får skinne. Det er kanskje derfor de servere de forskjellige elementene som forskjellige retter etter hverandre i stedet for å legge alt på en tallerken. Ikke vet jeg, men når jeg har vent meg til å få maten servert på den måten er det ikke rart lenger. Altså å spise pasta eller poteter først, deretter grønnsaker og så kjøtt eller fisk til slutt.

Primi piatti er den første retten ut, etter kanskje noen apetittvekkere (antipasti). Primi er ofte pasta, risotto, gnochhi eller det kan være en suppe, omelett eller kanskje polenta. Det er i hvert fall ofte en stivelsesrik rett som er ment å stille den verste sulten med relativt rimelige råvarer før det mer eksklusive og dyrere kjøttet kommer på bordet. Ikke så dum tanke i grunn, nå i disse dager da det snakkes så mye om å redusere kjøttforbruket til beste for helse, miljø og lommebok.

For tiden foregår det en utfordring blant matbloggere om å lage potetoppskrifter. Det er Ina som står bak Mat på bordet, som har bestemt at det er poteter det skal dreie seg om denne måneden. og mitt bidrag er gnocchi, smaksatt med parmesan og stekt i andefett . Disse små potetbitene er en flott rett i seg selv, eller servert på en mer norsk måte som tilbehør til stekt kjøtt eller fugl. Uansett så smaker de himmelsk. Det er noen ting som er viktig å passe på når man skal lage gnocchi.

Det først er at potetene som skal brukes er melne og ikke kokefaste. Det er fordi stivelsen er viktig for å holde gnocchiene sammen og luftige. Bruker du kokefaste poteter trenger du mye mer mel og de blir tunge og vil smake mel.

Bak potetene i stedet for å koke dem. Det gjør at vann fordamper fra potetene og de blir tørrere. Det gjør igjen at du trenger mindre mel.

Arbeid minst mulig med deigen. Det gjelder det samme her som med en smørdeig. Bare få deigen sammen slik at det blir en sammenhengende deig som du kan rulle ut pølser. Alle disse forholdsreglene handler om å få en deig som gir så luftige og lette gnocchier som mulig.

Ingredienser

  • 400 gr mandelpoteter
  • 60 gr hvetemel
  • 15 gr revet parmesan
  • 1 stor eggeplomme
  • 1/4 ts salt
  • 10 blader salvie
  • 4 ss andefett
  • Flaksalt 

Fremgangsmåte

  • Bak mandelpotetene på 200 grader til de er myke.
  • Ta ut innmaten av potetene og gni dem gjennom en sikt eller press gjennom en potetpresser mens potetene ennå er varme.
  • Tilsett mel, ost, egg og salt. Kna det samme til det er en fin deig som holder godt sammen.
  • Rull deigen ut i pølser som er ca. 1,5 cm i diameter. Skjær i biter som er ca. 2 cm lange.
  • Press tindene på en gaffel ned i hver gnocchi slik at det blir et fint stripemønster på dem.
  • Kok gnocchiene i lettsaltet vann, noen av gangen.
  • De er ferdige når de flyter opp til overflaten. Fisk dem da opp og legg dem på et kjøkkenhåndkle slik at de får dryppet av seg.
  • Varm andefettet til høy varme og stek gnocchiene til de har fått en fin farge og stekeskorpe. Finstrimle salvien og stek den i andefettet. Ha den sprøstekte salvien over gnocchiene og dryss flaksalt over før servering.
