Av og til får jeg servert en deilig salat av rødbeter og nektariner til lunsj på jobben. For meg var det en ukjent, men veldig god kombinasjon Det var faktisk denne salaten som fikk meg til å innse at rødbeter er godt og noe helt annet enn de rifla greiene de selger på glass. Denne salaten er søt, salt og litt skarp på samme tid og jordsmaken i rødbetene er litt tonet ned på grunn av alle de andre gode smakene. Oppskriften nedenfor er min tolkning av denne salaten. Blåmuggost bidrar til å gjøre salaten salt mens honning i dressingen gjør den søt. Litt skarp sennep gir et lite sting som gjør smaken enda mer spennende.

Jeg elsker blåmuggost, men har du ikke det, eller liker det ikke, kan du fint bruke chevre, fetaost eller en annen salt og myk ost. Det viktigste her er at osten er ganske salt, for det trenger salaten. Rødbetene er jo ganske søte i seg selv, og med honning i dressingen vil det bli helt overkill uten det saltet som osten bidrar med.

Ingredienser

  • 4 store rødbeter
  • 3 nektariner
  • 100 gr. selbu blå
  • 1 pakke grønnkål
  • 1 ss god olivenolje
  • 2 ss sherryeddik
  • 1 ts dijonsennep
  • 1 ss honning
  • 3 ss god olivenolje
  • salt og nykvernet pepper

Fremgangsmåte

  • Begynn med å bake rødbetene. Vask dem godt og pakk inn i aluminiumsfolie. Sett dem inn i ovn på 220 grader og la dem stå i ca. 1,5 time. De skal være myke når de er ferdige.
  • Mens rødbetene bakes i ovnen gjøres resten av ingrediensene klare.
  • Vask grønnkålen godt og rist av vannet. Del den i små biter og masser den med olivenoljen til den har blitt litt mykere. Del nektarinene i tynne båter.
  • Bland sammen ingrediensene til dressingen i den rekkefølge de står listet opp, en av gangen. Avslutt med å smake til med salt og pepper.
  • Når rødbetene er ferdig bakte, tas de ut av aluminiumsfolien og settes til side for å kjøles litt ned. Når de har blitt såpass avkjølt at det er greit å håndtere dem kan skinnet dras av.
  • Nå kan det være en god ide å bruke tynne hansker for å unngå misfargede hender. Skjær rødbetene i terninger og ha nektariner sammen med rødbetene i en arbeidsbolle. Hell over dressingen og bland godt sammen.
  • Anrett grønnkålen på et stort serveringsfat og legg over rødbete/nektarinblandingen.
  • Avslutt med å smuldre blåmuggosten og dryss over.
