Selv om den siste uken har vært riktig så sommerlig, er det definitivt høst nå. Det merkes i hvert fall godt på utvalget av deilige, friske grønnsaker som er å få i butikken. Det er alle slags rotfrukter som strutter av farger, vitaminer og gode smaker. Av alle rotgrønnsakene er nok beten den jeg bruker aller minst. For meg har rødbeter stort sett vært de man får på glass i butikken, og det har vært det. Helt til nå. For nå er det en utfordring på gang. Mia Frogner med bloggen Green Bonanza har utfordret alle matbloggere til å lage noe godt med beter. Den utfordringen kunne jeg selvsagt ikke la gå fra meg, så da måtte jeg bevege meg litt utenfor komfortsonen min. Men, det har jeg jo godt av. Så her kommer mitt (første) bidrag med beter.

Det er mange matbloggere som har kastet seg på utfordringen, så har du lyst på beteinspirasjon er det masse å ta av. Det er mange som har laget salater. Aicha har laget en nydelig salat med beter og fiken og Siv baker og steiker foreslår en rødbetesalat med ostekrem og rugsmuler som ser helt herlig ut. Har du mer lyst på en suppe, foreslår Maj-Britt fra Spiselandslaget en fløyelsmyk rødbetesuppe med kjøttboller. Men beter kan brukes til mere, som for eksempel pizzafyll. Det finner du oppskrift på hos Kvardagsmat. Det går også fint an å bruke rødbeter til søte saker. Jeg har sett flere sjokoladekaker med rødbeter og Tove med bloggen Idefull har laget en dessert. Går du inn på instagram og sjekker @matbloggsentalen finner du mer beteinspirasjon.

Jeg er veldig glad i italiensk mat og pasta i alle former. Grønn pasta har jeg laget før, men nå fikk jeg lyst til å prøve å lage rosa pasta. Rødbeten har et kraftig fargestoff som egner seg godt til å farge pastadeigen med. Det er på tide med en disclaimer (eller advarsel om du vil). Dette er ikke fast-food. Men har du lyst på noe skikkelig godt, iøyefallende og annerledes, kan denne pastaretten absolutt anbefales.

Et godt råd før du begynner å lage dette. Rødbeten har sterk farge, så det kan være lurt å tenke over hvor du arbeider med pastadeigen. Pass på at den ikke setter stygge flekker som ikke går bort. Det samme gjelder selvsagt klær. Jeg brukte dessuten latekshansker når jeg arbeidet deigen sammen.

Ingredienser

  • 1 stor rødbete
  • 1 egg
  • 250 gr hvetemel, tipo 00
  • 1 klype salt
  • 100 gr. fetaost
  • 100 gr smør
  • 25 hasselnøtter
  • 2 kvister estragon

Fremgangsmåte

  • Begynn med å vaske rødbeten godt. Pakk den inn i aluminiumsfolie og bak den i 1,5 timer på 200 grader. Den skal være gjennombakt slik at den er helt myk. La beten kjøle seg litt ned.
  • Når den har blitt så kald at den kan håndteres, fjernes skinnet. Det gjør du enkelt ved å bare klemme/dra det av.
  • Avkjøl rødbeten helt og mos den gjennom en sikt.
  • Bland et egg inn i rødbetmosen.
  • Mål opp melet og legg det i en haug på arbeidsbordet. La en fordypning i melet og hell bete/eggeblandingen i den.
  • Bland sammen mel og det våte med fingrene til det er en klump som henger sammen. Det er mulig du trenger mer mel, for deigen skal ikke være klissete. Forsett å elte deigen i ca. 10 minutter til. Da skal deigen være elastisk.
  • Pakk deigen inn i plastfolie og legg den i kjøleskapet i ca. 30 minutter. Nå er deigen klar til å rulles ut.
  • Har du en pastamaskin bruker du den. Det er viktig å bruke nok mel når deigen skal rulles ut. Dersom deigen er for klissete, vil den bare klistre seg sammen når den kommer ut av maskinen. Dryss derfor litt mel på emnene mellom hver gang du ruller deigen.
  • Del deigen i to emner. Begynn med den største åpningen og rull gjennom. Fortsett å rulle den gjennom på stadig mindre åpning. Rull den ut så den blir så tynn at du nesten kan se gjennom deigen. Jeg stanset når jeg var kommet til hakk nr. 7 (Atlas500). Skjær deigen i passelig lange emner (ca. 30 cm.) Rull så deigen gjennom tagliatelle kutteren og la den tørke litt før den skal kokes.
  • Har du ikke pastamaskin, bruker du kjevle og kjevler så tynt som du bare kan. Skjær strimler med en kniv eller et pizzahjul.
  • Mens pastaen tørker litt, brunes smøret. Ha det i en liten gryte og la det koke til det begynner å bli nøttebrunt. Pass på å ta det av varmen før det blir brent.
  • Grovhakk nøttene og sett til side. Mos fetaosten med en gaffel. Grovhakk estragonen.
  • Kok opp vann til pastaen og tilsett godt med salt. Pastaen skal bare koke i 2 minutter.
  • Hell av vannet og rør inn smøret. Server med nøtter, ost og estagon drysset over pastaen.

Med godt brød og en grønn salat blir dette et helt måltid. Vel bekomme.
