Dette er en super hverdagsmiddag. Den smaker kjempegodt, er enkel å lage og veldig sunn. En skikkelig schlager med andre ord.Det å pakke inn fisken på denne måten er en tradisjonell fransk måte å tilberede fisk på som kalles «en papilotte». Ved å pakke inn fisken før den bakes i ovnen blir fisken dampet inne i pakken og resultatet blir en veldig saftig fisk. Hele pakken settes på bordet slik at alle kan kjenne de herlige aromaene av fisk, urter og grønnsaker når pakkene åpnes. Det er helt vidunderlig.

Her kan man bruke både fisk som har vært frossen eller fersk fisk. Jeg brukte det jeg kaller «fire på rad» fra frysedisken. Bare sørg for at fisken her helt tint før den settes inn i ovnen.

Både fennikel og estragon har en litt lakrisaktig smak som jeg synes kler den litt fete smaken fra fisken, og sammen med squashen og gulrøttene er det en superkombinasjon. Bedre og enklere hverdagsmiddag skal man lete lenge etter.

Ingredienser

  • 600 gr. laksefilet med skinn
  • 1/2 squash
  • 2 gulrøtter
  • 1 fennikel
  • 6 store kvister frisk estragon
  • 100 gr smør
  • salt og pepper
  • 4 stykker bakepapir

Fremgangsmåte

  • Forvarm ovnen til 180 grader.
  • Del laksefileten i fire porsjonsstykker.
  • Rens grønnsakene og skjær i tynne skiver.
  • Riv av fire stykker med bakepapir som er omtrent kvadratiske.
  • Legg 1/4 av smøret midt på ett av papirstykkene. Legg deretter på grønnsakene oppå smøret og deretter estragon. Legg fisken oppå og dryss med salt og pepper. Legg litt estragon på toppen.
  • Brett papiret og klem godt sammen, så det blir en tett pakke. Du kan gjerne bruke stiftemaskin, men det er ikke nødvendig.
  • Gjør det samme med de tre andre. Legg pakkene inn i ovnen og stek i 15 minutter.
  • Legg en pakke på hver tallerken og server med kokte poteter eller ris ved siden av.
