Hvem har sagt at brød skal spises ved siden av suppen. Av og til går det like bra å putte brødet oppi suppen. Et kjent eksempel på det er jo gratinert løksuppe. Det er en herlig suppe som er en kjær favoritt for mange, meg inkludert. I denne tomatsuppen tas det med brød i suppen enda lengre, fordi brødet ikke bare skal legges på til slutt, men skal koke med hele tiden. I tillegg til det opplagte, nemlig at det smaker veldig godt, er det en super måte å bruke opp gammelt brød på. Jeg er ikke så sikker på om det passer ypperlig med et skikkelig mørkt brød med masse korn i, men til den loffen som er igjen etter en rekeaften eller landbrød om ble igjen etter helgen, er denne oppskriften helt super.

Jeg har lenge vært fan av den franske matbloggeren Clotilde Dusoulie, som er kvinnen bak den flotte bloggen Chocolate & Zucchini. Da hun for et par år siden ga ut en kokebok måtte jeg bare ha den. Boken heter French market cookbook og er en vegetarisk kokebok som følger årstidene. Den har mange spennende oppskrifter og flotte bilder. Det er fra denne kokeboken jeg har hentet denne suppen.

Akkurat nå er det masse flotte rødt, smaksrike tomater å få tak i, og i denne oppskriften er det absolutt nødvendig å bruke slike tomater. Suppen vil definitivt ikke stå seg dersom man bruker lyseoransje tomater nesten uten smak. Med relativt få ingredienser er det viktig at de som brukes er av topp kvalitet. Her får gode tomater virkelig skinne.

Ingredienser

  • 1 liten gul løk
  • 2 fedd hvitløk
  • 10 blader salvie
  • 1 klype salt
  • 1 ss olje til steking
  • 1,5 kg godt modne tomater
  • 5 skiver loff eller landbrød
  • 1 l grønnsaksbuljong
  • salt og pepper etter smak
  • evt. litt shriracha
  • 1 kvist estragon
  • god olivenolje
  • revet parmesan

Fremgangsmåte

  • Skjær løken i tynne skiver, finhakk hvitløken og skjær salvien i tynne strimler.
  • Varm oljen og fres løk, hvitløk og salvie sammen med en klype salt til løken har blitt myk og falt sammen. Pass på at løken ikke tar farge.
  • Skjær tomatene i grove terninger og tilsett dem i gryten. Fres ytterligere et par minutter.
  • Hell over grønnsaksbuljongen.
  • Skjær brødet i grove terninger og ha oppi gryten.
  • La det koke i ca. 30 minutter. Da har tomatene blitt skikkelig myke og brødet har jevnet suppen.
  • Ønsker du et lite kick i suppen kan du tilsette litt schriracha mot slutten av koketiden.
  • Grovhakk litt estragon eller andre friske urter du måtte ha.

Server suppen rykende varm. Ringle litt olivenolje og dryss på litt grovhakkede urter og revet parmesan. Vel bekomme!
