For oss som var barn på 70- og 80-tallet har meksikansk gryterett en helt spesiell betydning. Denne gryteretten er noe ganske annet.

Dette er en skikkelig god og enkel hverdagsrett som er full av meksikanske smaker. Det er ikke alltid det er så mye tid til å lage middag, og denne retten er kjapp å få i stand. Begynn med å sette på risen, så er den ferdig nesten samtidig som maten. Ingredienslisten ser kanskje lang ut, men bortsett frø løk, hvitløk og paprika er det ikke noe som krever noe forarbeid i form av kutting eller noe annet. Ja, jeg glemte å nevne kyllingen da, men så er det ikke noe mer. Bare mål opp og ha alt i samme gryte – easy peasy.

Fordi Lillemor ikke er særlig glad i chili bruker jeg ikke så mye som vi andre i familien kanskje skulle ønske, men her er det jo opp til kokken å bestemme hvor sterk den ferdige retten skal bli. Jeg synes i grunnen at det er litt vanskelig å vite hvor sterk chilien er når jeg kjøper den i butikken. Jeg pleier derfor å begynne med litt og heller tilsette mer dersom den ikke er så sterk. Det er lettere den veien, enn dersom det blir for mye fra starten av.

Ingredienser

  • 1 gul løk
  • 1 ts spisskummen
  • 2 ts paprikapulver
  • 1 ts løkpulver
  • 1 ts nykvernet pepper
  • 1 ts oregano
  • 1 finhakket chili (valgfritt)
  • olje til steking
  • 2 ss tomatpure
  • 1 terning hønsebuljong
  • 1 ts sukker
  • 2 fedd finhakket hvitløk
  • 1 boks hakkede tomater
  • 1 rød paprika skåret i biter
  • 1 boks kidneybønner
  • 1 liten boks mais600 gr kyllingfilet
  • koriander eller vårløk til servering

Fremgangsmåte

  • Hakk løken.
  • Varm oljen i en gryte og fres løk og krydder til løken har blitt myk og falt sammen. Tilsett hvitløk og tomatpureen og fres et par minutter til. Ha oppi de hakkede tomatene, chilien, paprikaen, bønnene og maisen.
  • La det koke på svak varme.
  • Skjær kyllingfileten i terninger og ha oppi gryten.
  • La det trekke til kyllingen er helt kokt, ca. 10 minuter.
  • Dryss over litt grønt.

Server varmt med ris ved siden av og gjerne noen limebåter til å dryppe saft over. Vel bekomme.
