Dette er en deilig lunsjrett som ikke krever så stor innsats fra hjemmekontoret, men som allikevel leverer på smak. Ovnsbakt søtpotet er rett og slett skikkelig digg, i hvert fall når den som her får følge av syrlig fetaost, frisk persille og knasende, sprøstekte frø.

I det hele tatt synes jeg det er veldig greit å lage ovnsbakte grønnsaker til lunsj. Skjær opp grønnsakene, ringle over litt olje, krydre med det du måtte like og la grønnsakene kose seg i ovnen mens du svarer på noen e-poster eller gjør noe annet jobbaktig. Etter 20-30 minutter har du en ferdig lunsj som smaker fortreffelig, er sunn og uten den store innsatsen.

Oppskriften nedenfor er til 2 personer, men den er like enkel å lage til flere eller færre. Bare gang opp eller del.

Ingredienser

  • 2 aøtpoteter
  • 1 + 1 ts olivenolje
  • salt og pepper
  • 100 gr fetaost
  • 1 ss solsikkefrø
  • 1 ss gresskarfrø
  • litt bladpersille eller andre urter

Fremgangsmåte

  • Sett ovnen på 200 grader.
  • Vask søtpotetene og skjær dem i 2, evt. 4 dersom de er veldig store.
  • Legg i ildfast form og smør snittflatene med 1 ts olivenolje og krydre med salt og pepper
  • Bak søtpotetene i 25-30 minutter. De skal være helt myke når de er ferdige.
  • Imens, rist frøene i en varm stekepanne med resten av olivenoljen til de får litt farge og begynner å poppe. Legg over på litt kjøkkenpapir så holder seg sprø. Sett til side.
  • Finhakk persillen og smuldre fetaosten.
  • Server søtpotetene med ost, frø og persille.
