Fisk på grillen er en skikkelig god idé. Her får du tre gode grunner: det er lettvint, stekeosen kommer aldri inn i huset og det smaker fantastisk godt. Feit fisk som laks, kveite og makrell går fint å legge rett på grillen. Mager fisk som torsk i stykker kan lett falle fra hverandre. Løsningen kan da være å grille den på aluminiumsfolie, i en spesiell fiskerist, eller pakke den inn i folien sammen med grønnsaker, urter og litt smør. Uansett hva man velger blir det godt. Legger du en hel fisk på grillen blir resultatet både spektakulært og godt. Dessuten er det enkelt. Rens fisken, stapp buken full av godsaker, bind fisken sammen og legg på grillen. Voila, et imponerende måltid er på vei.

Jeg stappet buken full av bredbladet persille og bjørnerot, men her er det opp til hver og en å bruke de urtene man liker best eller har tilgjengelig. Prøv gjerne med sitrontimian, estragon, gressløk eller løpestikke. Jeg tror det blir godt nesten uansett hva man bruker.

Ingredienser

  • 2 fjellørret 
  • 1 liten bunt bredbladet persille
  • 4 kvister bjørnerot
  • salt og pepper
  • 1 sitron i tynne skiver
  • litt olje

Fremgangsmåte

  • Rens fisken, men behold hodet på. Skjær små snitt i skinnet på begge sider. Salte og pepre fisken inni og stapp den så full som overhode mulig med sitronskiver og urter.
  • Bind hver fisk sammen med litt kjøkkenhyssing slik at alle godsakene inni fisken holder seg på plass.
  • Pensle litt olje på fiskene og legg dem på varm grill. La dem ligge der til skinnet har fått fin farge og det slipper grillen. Snu og gjør det samme på den andre siden. Når den siden også har fått fin farge legges fiskene over på indirekte varme til de har blitt gjennomvarme.
  • Alt i alt tok det nok ikke mer enn ca. 15 minutter. Ett triks for å bestemme om fisken av nok stekt, er å stikke en spiss kniv inn i den tykkeste delen av fisken og holde den der et par sekunder. Trekk kniven ut og legg dem mot leppen. Dersom kniven er varm, er fisken ferdig.

Server med mer sitron til å dryppe over, grønn salat og kokte nypoteter. Smør eller rømme til er definitivt heller ikke feil. Vel bekomme.
