Nå er ferien definitivt over og det er tilbake til striskjorta og havrelefse for de fleste av oss. Ja, kanskje ikke striskjorte akkurat, men hverdagsmat i hvert fall. Det er kanskje på tide med kjøttfrie mandager igjen også. Colcannon med savoykål og purre er en super hverdagsrett full av gode smaker, og passer ypperlig på denne tiden av året. Det er riktignok både fløte og smør i denne, så helt Grete Roede er det nok ikke, for de som bryr seg om det. Colcannon kommer fra Irland, og er rett og slett en rik og fluffy potetstappe som er blandet med kål og løk eller purre.

Du kan godt spise dette som en selvstendig rett, for den metter ganske så godt med både poteter, kål og en god del smør. Tradisjonelt blir den spist med skinke eller bacon, og vil nok passe ypperlig til pølser også.

Jeg har brukt savoykål i denne colcannon’en, og det tror jeg må være en av de vakreste grønnsakene som finnes. Se bare på bildet nedenfor. Du kan godt bruke andre kåltyper også, grønnkål, svartkål eller vanlig hodekål går alle fint å bruke. Men like vakre er de ikke.

Ingredienser

  • 1 kg melne poteter
  • 2 purrer
  • 6 store blader av savoykål
  • 1 stort fedd hvitløk
  • 25 + 100 gr smør
  • 1 ts salt
  • 1 dl melk
  • 1 dl fløte
  • nykvernet pepper

Fremgangsmåte

  • Kok potetene i vann UTEN salt til de er helt møre.
  • Rens purren og skjær den i 1/2 cm tykke skiver
  • Vask kålen og skjær bort den grove stilken i midten og deretter i strimler.
  • Finhakk hvitløken.
  • Mens potetene koker, fres purre, kål og hvitløk i 25 gr smør til det er mykt og har falt sammen.
  • Skrell potetene og mos dem til en så fin stappe som du vil.
  • Tilsett fløte, melk og smør og bland godt. Stappen skal være ganske løs, men ikke flytende. Er den for fast, tilsett litt mere fløtemelk.
  • Smak til stappen med salt og pepper.
  • Rør inn grønnsakene og smak til med mer salt og pepper om nødvendig.

Server som selvstendig rett, eller sammen med bacon, skinke eller pølser

Tips

Dersom du ikke får tak i savoykål, kan du bytte den ut med grønnkål, svartkål eller vanlig hvit kål.
