Sitronfromasj er en klassisk dessert som hører til de flotte middagene og høytidene. Kanskje litt retro, men så god at det er på tide å børste støvet av denne desserten og løfte den frem på menyen. Å spise en god sitronfromasj er omtrent som å spise en florlett sky av skum og frisk sitronsmak. Men ikke la deg lure, selv om denne desserten føles lett og frisk i munnen, er den ganske kraftig og passer best etter en litt lett hovedrett.

Det er i grunnen ganske lett å lage fromasj. Det eneste man må passe godt på er at gelatinen blir rørt godt ut i det varme sitronvannet og at vannet deretter avkjøles så mye at fromasjen ikke skiller seg når den has i eggedosis og kremblandingen. Sitronfromasjen kan godt lages dagen i forveien, og bare pyntes rett før servering. Mange liker en kremdott på toppen, men jeg synes det blir mektig nok som det er og går heller for en liten sitronskive og litt grønt.

Ingredienser

  • 5 plater gelatin
  • 3 egg
  • 1,5 dl sukker
  • 3 dl kremfløte
  • saft og skall av 1 sitron
  • vann

Fremgangsmåte

  • Legg gelatinplatene i kaldt vann i ca. 10 minutter.
  • Pisk egg og sukker til en luftig eggedosis.
  • Pisk fløten stiv.
  • Mål opp sitronskall og sitronsaften og fyll på med vann til det utgjør 2,5 dl.
  • Varm opp sitronvannet.
  • Klem ut vann av gleatinplatene og rør dem inn i det varme sitronvannet. Rør til alt er helt oppløst.
  • Når sitronvannet har blitt fingervarmt, hell det i en tynn stråle ned i eggedosisen og rør godt.
  • Bland til slutt inn den stive fløten.
  • Hell i porsjonsformer, eller i en stor serveringsbolle. Sett kaldt i minst 4 timer.
