Bouillabaisse er en deilig fiskesuppe som passer like godt en varm sommerdag, som på en kald og forblåst høstdag. Opprinnelig brukte fiskerne i Marseille resten av det de hadde fisket opp av havet, og kanskje ikke fått solgt. I hvert fall skal det etter sigende være minst 3 sorter fisk i suppen og litt forskjellig slags skjell og annen sjømat for at den skal være autentisk.

Min oppskrift på bouillabaisse er helt sikkert ikke autentisk, men den smaker aldeles nydelig, er enkel å lage og passer særdeles godt til å dele med mange. Det er bare å lage dobbel eller trippel porsjon. Jobben blir ikke noe særlig større og jeg synes det er veldig hyggelig å samle gode venner rundt en gryte med noe godt. Server den gjerne med godt brød som for eksempel focaccia og god hjemmelaget majones med masse hvitløk i.

Ingredienser

  • ½ gul løk
  • 2 fedd hvitløk
  • ½ fennikel
  • 1 ss olivenolje
  • ¼ dl Pernod
  • 1 dl hvitvin
  • 1,5 l vann
  • 2 terninger fiskebuljong
  • 1 boks hakkede tomater
  • 150 gr. laksefilet
  • 150 gr. steinbitt filet
  • 150 gr. seifilet
  • 250 gr. reker
  • 300 gr. blåskjell

Fremgangsmåte

  • Finhakk løk, hvitløk og fennikel og fres det i oljen.
  • Tilsett Pernod’en og la det koke inn.
  • Tilsett hvitvinen og la det koke inn.
  • Tilsett vannet , buljongen og tomatene med kraften.
  • Mens det koker opp, skjær fisken i biter og rense rekene og blåskjellene. Tilsett fisken og blåskjellene og la det trekke til det er ferdig.
  • Ha rekene i rett før servering. De skal ikke bli koke, bare bli varme

Det smaker godt med fersk loff og aïoli til denne suppen.
