Majones med hvitløk, hvitløksmajones eller aïoli – kjært barn har mange navn. Og kjært barn er det virkelig hjemme hos oss. Hjemmelaget majones står på bordet ganske ofte. Til reker, på tapasbordet,  til bouillabaisse eller eller bare til å bruke på brødskiven istedet for smør.

Jeg har inntrykk av at mange tror det er vanskelig å lage majones. Det er det ikke, i hvert fall ikke i følge Husbond, for dette er hans glansnummer på kjøkkenet. Det jeg vet er at det ikke tar mange minutter å piske sammen denne kalde sausen. Og resultatet? Det er definitivt verdt innsatsen. Har man spist denne majonesen går man ikke gjerne tilbake til tubevarianten fra Mills.

Hvitene skal ikke brukes til majonesen, men kan for eksempel brukes til å lage pikekyss.

Ingredienser

  • 1 fedd hvitløk
  • 1 ts dijon sennep
  • 1 ss hvitvinseddik
  • 2 egg
  • 3 dl nøytral olje
  • 1/2 ts salt

Fremgangsmåte

  • Visp sammen sennep, hvitløk og eddik i en bolle.
  • Skill plommene fra hvitene.
  • Pisk inn eggeplommene.
  • Begynn å tilsette oljen i en tynn stråle mens du visper hele tiden. Følg med og se at eggeplommene absorberer oljen. Ikke tilsett mer før alt er absorbert.
  • Pisk til all oljen er tilsatt. Da egg kan variere ganske mye i størrelse må man ofte smake til majonesen med mer sennep, eddik eller salt.

Tips

Dersom du ønsker en majones uten hvitløk, bare dropper du å tilsette det.
