Spagetti carbonara er en av de store italienske klassikerene. Den er like enkel som den er genial, og det finns sikkert like mange oppskrifter som det finnes italienske husmødre. Dessuten må den være en av de enkleste spagettirettene man kan lage. Det tar ikke lenger tid å få alt ferdig, enn det tar å koke spagettien.

Vi har hatt spagetti carbonara til middag med ujevne mellomrom de mange siste årene, men etter en ferietur til Italia for et par år siden, fikk Tuppen fullstendig tenning. Hun levde på spagetti carbonara i et par uker og har siden spurt om det til middag rett som det er. På dager med liten tid er det derfor lett å si ja.

Spagetti carbonara skal være kremete og luftig. Jeg har oppdaget at dersom jeg tilsetter litt av pastakokevannet til slutt, er det veldig lett å få akkurat dette. Jeg tror dette skyldes at pastaen rett og slett får litt mer fuktighet og at pastavannet inneholde en del stivelse som bidrar til å jevne sausen litt. Dette er forresten et godt triks for andre pastasauser også der ost er en viktig del av sausen som for eksempel den romerske klassikeren cacio e pepe.

Ingredienser

  • Spagetti til 4 personer
  • 2 ss smør
  • 1 fedd hvitløk
  • 150 gr. bacon
  • 2 sammenpiskede egg
  • 80 gr. parmesanost
  • 0,5-1 dl kokevann fra spagettien
  • Pepper (og salt)

Fremgangsmåte

  • Sett på vann til spagettien, og ha spagettien i når det koker.
  • Skjær baconet i biter og stek bacon og hvitløken i en kjele sammen med smøret til baconet blir brunt og sprøtt.
  • Ta hvitløken ut og kast den.
  • Når spagettien er kokt, ta vare på litt pastavann (ca. 1 dl) og hell av resten av vannet.
  • Bland spagettien i baconet med stekefettet.
  • Ta kjelen av varmen og tilsett eggene og halvparten av osten.
  • Tilsett litt av kokevannet og rør godt, til du får en kremet konsistens og all spagettien er dekket av saus.
  • Kvern rikelig med pepper over. Bacon kan være mer eller mindre salt. Smak derfor om du trenger å tilsette litt salt.
  • Tilsett resten av osten.

Server med en gang - gjerne med en grønn salat til. Sett gjerne parmesanen på bordet slik at alle kan rive litt ekstra på sin porsjon om de ønsker det.
