Ting trenger ikke alltid å være så komplisert. Cacio e pepe består av 4 ingredienser og smaker helt himmelsk. Dessuten tar det ikke lengre tid å lage den enn det tar å koke spagetti. Serverer du denne sammen med en frisk salat, har du en flott lunsj eller middag på 15 minutter.

Cacio e pepe, er en skikkelig romersk klassiker. Cacio er et dialektord for peccorino, og pepe betyr pepper og det sier alt om hva denne retten handler om. Det sies at det var gjeterne rundt Roma som fant opp denne retten. De hadde med seg tørr pasta, en ostebit og litt pepper ut på markene. Da hadde de alt de trengte for å lage cacio e pepe. Hvis de fikk fyr på bålet, vel å merke. Nå for tiden er det nok ikke så mange gjetere, men romerne er fortsatt glade i denne enkle retten. Derfor finnes den fremdeles på svært mange restauranter rundt i byen – i hvert fall av de litt enklere restaurantene.

Jeg er veldig glad i pasta. Det smaker så godt, og dessuten tar det aldri lang tid å trylle frem et raskt måltid, uten nesten noe som helst i huset. Er du også glad i spagetti, finnes det mange oppskrifter på bloggen.

For ordens skyld, på bildet har jeg drysset litt finhakket persille. Det er ikke vanlig å tilsette persille i cacio e pepe, men jeg gjorde det for å tilføre litt farge i bildet. Det smaker også godt, så dryss gjerne litt over dersom du har og føler for det.

Ingredienser

  • Spagetti til 4 personer
  • 3 dl fint revet peccorino
  • 1 ss hel sort pepper
  • 1 ss smør

Fremgangsmåte

  • Begynn med å sette på pastavannet.
  • Riv osten og knus pepperen grovt i en morter. Sett begge deler til side.
  • Kok spagettien 3 minutter kortere enn angitt på pakningen for al dente.
  • Mens spagettien koker, smelt smøret i en panne og rist det knuste pepperet til det begynner å dufte godt.
  • Ta av 3 dl av kokevannet og hell resten av vannet av.
  • Bland spagettien inn i peppersmøret, hell på 1,5 dl av kokevannet og bland inn osten. Rør til alt er godt blandet. Tilsett evt. litt mer kokevann dersom spagettien er tørr. Retten er ferdig når osten har smeltet helt og sammen med kokevannet blitt en kremaktig saus.

Server straks med en salat ved siden av.

Tips

Får du ikke tak i peccorino, kan du bruke parmesan. Retten blir ikke like autentisk, men smaker veldig godt allikevel.
