Retten er etter sigende oppkalt etter en russisk greve og diplomat som selvsagt het nettopp Strofanoff. Han skal ha vært svært glad i biff og kokken hans lagde denne retten til ham en gang på 1890-tallet, og voila, biff stroganoff hadde sett dagens lys. Andre kilder sier derimot at retten er langt eldre. Men at retten stammer fra Russland synes det å være enighet om. Utover første halvdel av 1900-tallet bredte retten seg over store deler av den vestlige verden og ble en populær rett som de fleste restauranter med respekt for seg selv hadde på menyen. En gang på 1980-tallet (tror jeg) gikk den av moten, men jeg mener den absolutt fortjener en renessanse. Det er tross alt en velsmakende rett som passer særlig godt på kalde vinterdager. I Russland er det visst vanlig å spise denne retten med stekte poteter. Jeg synes en god hjemmelaget potetstappe er best til, men ris går også fint.

For meg er dette en typisk vinterrett som stort sett gjør seg selv. Først skjærer og bruner man alt, så helles det på væske og gryten får passe seg selv i et par timer. Om du vil gå ut en tur, er det bare å sette gryten inn i stekeovnen i stedet for på steketoppen. Så passer den seg i hvert fall helt selv. Så er det bare å røre inn litt fløte og rømme til slutt, så er det bare å si vel bekomme.

Ingredienser

  • 900 gr. rundbiff, skåret i strimler
  • 2 ss rapsolje
  • 2 små løk, skåret i tynne båter
  • 6 store sjampinjonger skåret i tykke skiver
  • 1 ts paprikapulver
  • ½ glass tomatpuré
  • 1 dl rødvin
  • 3 dl vann
  • 1 laurbærblad
  • 2 store røde paprikaer , skåret i strimler
  • 1 dl fløte
  • 3 ss rømme
  • salt og pepper

Fremgangsmåte

  • Varm opp oljen i en gryte som er stor nok til å romme alt sammen, og stek kjøttet til det er brunt på alle sider.
  • Dersom det er mye stekekraft i gryten nå, hell det av og gjem det til etterpå.
  • Tilsett løk og sjampinjong og la det steke med til sjampinjongen begynner å slippe væske.
  • Ha i paprikapulveret og tomatpuréen og la det surre med et par minutter.
  • Krydre med salt og pepper og tilsett vann, vin (og stekekraften dersom det er noe) og paprika.
  • Sett lokk på gryten og la det koke i minst to timer, men sjekk innimellom og tilsett evt. litt mer vann dersom det ser tørt ut.
  • Ta av lokket tilsett fløte og rømme, og la det koke i ca. 15 minutter uten lokk slik at det ikke blir så tynn saus.
  • Ta opp laurbærbladet og smak om retten trenger mer krydder.

Server rykende varm, gjerne med potetstappe og en grønn salat til.
