Etter min mening er det få ting som smaker slik av barndom som fiskegrateng. For meg er det ekte «comfort food» – altså mat som trøster, gir trygghet og gode minner. Det er i grunnen litt rart, for det er ikke noe vi hadde særlig ofte hjemme i mitt barndomshjem. Og dersom det sto fiskegrateng på bordet, var den kjøpt i butikken. Men godt var det og det var ingen sure miner selv om det sto fisk på bordet. Etter at jeg fant ut hvor lett det i grunnen er å lage fiskegratengen selv, kommer det ikke på tale å kjøpe.

Denne oppskriften er basert på gode gamle Ingrid Espelid Hovig sin oppskrift fra den rutete kokeboken, men mengdene er tilpasset litt slik at familien vår blir mett. Dessuten har jeg lagt til makaroni. Det er også greit å bruke andre fiskeslag enn torsk. Sist jeg lagde fiskegrateng brukte jeg hyse.

I oppskriften skiver jeg at eggehvitene skal piskes og vendes inn til slutt. Dette gir en fin, luftig grateng. Du kan hoppe bukk over dette og tilsette eggene hele i den hvite sausen. Da blir gratengen litt mer kompakt, men smaken blir den samme gode.

Det går også fint an å variere fiskegratengen med å tilsette grønnsaker i stedet for, eller i tillegg til makaronien. Blomkål er en av mine favoritter i fiskegratengen.

Ingredienser

  • 600 gr torskefilet kokt
  • 2 dl kokt makaroni
  • 50 gr. smør
  • 3 ss hvetemel
  • 3 dl melk
  • ½ ts salt
  • pepper
  • revet muskatnøtt (litt)
  • 4 egg
  • Griljermel

Fremgangsmåte

  • Lag den hvite sausen først. Smelt smøret i en liten kaserolle, rør i melet og spe med melken. La sausen småkoke noen minutter og tilsett salt og krydderet.
  • Ta sausen av varmen og la den avkjøle seg litt.
  • I mens skill eggene og del fisken i småbiter.
  • Bland deretter eggeplommene, fisken og makaronien i den hvite sausen.
  • Stivpisk eggehvitene og fold dem forsiktig i blandeingen.
  • Hell alt i en godt smurt ildfast form og strø griljermel over.
  • Stek i ovnen ved 200 grader i ca. 40 minutter

Til fiskegratengen passer det godt med kokte poteter, smeltet smør og grønn salat eller revne gulrøtter for en enda mer autentisk retrofølelse.
