I går hadde Husbond og jeg et hyggelig måltid for to sammen. Det er ikke så ofte vi har det lengre, men det er jo veldig hyggelig når det skjer. Til forrett hadde vi skrei med gulrøtter. Det er kanskje ikke akkurat en nyskapende kombinsajon, men med en ny tilberedningsmetode, ble det allikevel en ny og spennende smak.

Gulrøttene ble tilberedt på sous vide metoden. Det vil si ved svak varme over lang tid. Å skaffe seg en sous vide maskin er både dyrt og vel i hus tar den stor plass. Det har jeg ikke lyst til, så da tar jeg heller i bruk ting jeg allerede har – stekeovn, jerngryte og zip-lock pose. Dette fungerer helt utmerket for mitt bruk. Maten som skal behandles på denne måten skal helst ligge i vakuum. Dersom du ikke har en vakuumeringsmaskin (slik jeg ikke har), går det fint å legge maten i en zip-lock pose. Dytt posen ned i vannet, men ha åpningen over vannflaten. Etter hvert som posen senkes ned i vannet vil luften presses ut. Pass på at det ikke kommer vann i posen.. Når posen er nesten helt nedi og det er lite luft igjen lukkes den. Voila, nesten vakuum.

Sous vide behandlingen av gulrøttene gjorde at de ble veldig søte og konsentrerte i smaken. Denne metoden for tilberedelse av grønnsaker kan absolutt anbefales. Det er altså ikke bare kjøtt og fisk som har godt av et langt vannbad.

For at fisken skal bli ekstra fast, legger jeg den i saltlake i 10 minutter før jeg steker den. På denne måte blir også fisken saltet bra.

Ingredienser

  • 4 store eller 8 små gulrøtter
  • 1 ss sukker
  • 50 gr. smør
  • nykvernet pepper
  • 1/2 ts salt
  • finhakket persille
  • --
  • 250 gr skrei
  • 1 l vann
  • 2 ss salt
  • smør og olje til steking

Fremgangsmåte

  • Rens gulrøttene og skjær dem i staver, eller behold dem hele dersom de er små (knaskegulrotstørrelse).
  • Legg gulrøtter, sukker, smør, salt og pepper i en zip-lock pose.
  • Sett ovnen på 80 grader og varm opp vann i en jerngryte til det holder 80 grader.
  • Senk posen med gulrøtter sakte ned i vannet og slipp ut så mye luft som mulig. Lukk posen helt. Sett hele gryten med lokk inn i stekeovnen og la det stå der i ca. 1 time.
  • Når det er ti minutter igjen til gulrøttene er ferdige blandes vann og salt. Rør til det er helt oppløst og legg fisken oppi. La fisken ligge i 10 minutter. Ta den deretter ut og klapp den tørr.
  • Stek fisken på middels varme på den ene siden i en blanding av smør og olje Pass på at fisken ikke setter seg fast i bunnen. Stek til den begynner å flake seg.
  • Når gulrøttene er ferdige tas de ut av ovnen og alt innholdet i posen helles over i en stekepanne. Stek på sterk varme til all væsken har fordampet. Rør underveis slik at gulrøttene blir glasert på alle sider.
  • Finhakk litt persille som has over gulrøttene når de er ferdige. Legg gulrøttene på varme tallerkener og legg fisken oppå.
