En dag i løpet av uken har vi vegetarmiddag. For å finne inspirasjon til nye oppskrifter søker jeg stadig på nettet, og for ikke så lenge siden fant jeg bloggen Green kitchen stories. Her fant jeg en oppskrift på potetpizza. Og siden jeg liker både poteter og pizza, ble jeg såpass interessert at jeg fikk lyst til å prove å lage min versjon. Resultatet ble riktig så godt synes jeg, men det er nok riktig å si at ikke alle i familien var like begeistret. Tuppen sa at hun ikke kunne forstå at jeg ikke hadde laget mer fyll når jeg faktisk hadde tatt meg bryet med å lage pizzadeig. Men smaken er jo som baken, og jeg likte det altså godt.

Potetpizza skal være en romersk spesialitet, og en veldig vanlig gatemat. Jeg har vært i Roma flere ganger, men aldri spist det der. Kanskje fordi jeg har prioritert å gå på restauranter i stedet. Men neste gang jeg skal dit vil jeg prøve, det er helt sikkert.

Jeg tok utgangspunkt i den vanlige pizzadeigen vi lager, men byttet ut litt av hvetemelet med rugmel for å få litt mer smak på bunnen. Så brukte jeg skikkelig god olivenolje og ikke bare den vanlige fra super’n. Potetene skal skjæres i tynne skiver, papirtynne skriver noen. Det er vanskelig å få til, men så tynne som mulig er i hvert fall et mål. Til å skjære dem opp brukte jeg en mandolin, men en kniv gjør selvsagt samme nytten selv om det kanskje ikke blir like tynt.

Ingredienser

  • 4 dl vann
  • 50 gr gjær
  • 1 ts salt
  • 4 ss olivenolje
  • 2 dl sammalt rugmel
  • 8 dl hvetemel
  • --
  • 6 mellomstore kokefaste poteter
  • god olivenolje
  • 1 fedd hvitløk
  • frisk rosmarin
  • parmesan
  • fingersalt

Fremgangsmåte

  • Forvarm ovnen til 250 grader.
  • Varm vannet opp til 37 grader og løs opp gjæren i vannet.
  • Mål opp mel og salt og ha det i en bakebolle eller kjøkkenmaskin.
  • Tilsett gjærvannet og oljen og elt deigen godt. Sett deigen til heving til den får omtrent dobbel størrelse.
  • Mens deigen hever, vask potetene grundig og skjær dem i tynne skiver, men behold skallet på.
  • Del deigen i to og kjevle ut deigen så den fyller en bakeplate.
  • Pensle deigen med olivenolje og strø på hvitløk.
  • Legg på potetskivene i taksteinmønster. Ringle over litt mer olivenolje og dryss på rosmarin, salt og revet parmesan.
  • Stek i ca. 15 minutter.

Server varm eller lunken med salat ved siden av.
