Det er vinter nå, og på denne tiden av året liker jeg å spise gode kraftige gryteretter som gjerne har stått i timesvis og putret på komfyren før de settes på bordet. Denne søndagen hadde jeg bestemt meg for å lage boeuf bourguignon. Retten er udødeliggjort i filmen Julia og Julie. Der en matblogger setter seg fore å hver dag i ett år lage en ny rett fra Julia Child sin kokebok, og blogge om det. Nevnte rett har en sentral rolle i en av filmens scener.

Jeg har lenge tenkt på å lage denne klassikeren, og hva er vel da mer naturlig enn å se i nettopp Julia Child sin kokebok. Oppskriften nedenfor er moderert litt i forhold til hennes oppskrift, dels fordi måten hun lager den på er særdeles omstendelig og dels fordi jeg har gjort noen mindre justeringer i ingrediensene. Jeg brukte kalvekraft i stedet for oksekraft og sjalottløk i stedet for småløk, ganske enkelt fordi det var det jeg hadde. Uansett godt ble det. I kokeboken skriver Julia Child at hi bedre kjøtt desto bedre resultat. Det er godt mulig, men jeg brukte høyrygg og det ble veldig bra. Koketiden blir selvsagt noe lenger når kjøttet ikke er så mørt i utgangspunktet, men jeg tror ikke smaken står noe tilbake.

Ingredienser

  • 200 gr. bacon
  • 1 kg oksekjøtt
  • litt olje til steking
  • 2 gulrøtter
  • 1 stor gul løk
  • 1 ts salt
  • rikelig nykvernet pepper
  • 20 gr. hvetemel
  • 1/2 l rødvin
  • 1/2 l kalvekraft
  • 1 ss tomatpure
  • 1 ts tørket timian
  • 1 laurbærblad
  • 8 store aromasopp
  • 15 små sjalottløk
  • 20 gr smør
  • 1 dl hvitvin

Fremgangsmåte

  • Skjær baconet i terninger og stek det i en jerngryte til det er gyllent.
  • Ta det ut av gryten men ikke hell ut fettet.
  • Skjær kjøttet i store terninger og brun det i baconfettet. Tilsett evt. litt olje dersom det ikke er nok baconfett. Brun noen stykker om gangen slik at gryten ikke blir kald. Da kokes kjøttet i stedet for å stekes. Ta kjøttet ut.
  • Skjær gulrøtter og løk i skiver og stek i det samme fettet.
  • Ha kjøtt og bacon tilbake i gryten. Dryss på salt og pepper og hvetemelet. Rør rundt til alt melet er fordelt på kjøttstykkene og blitt litt brunt.
  • Tilsett tomatpuré, vin og kraft så det dekker kjøttet. Legg i laurbærbladet og timianen. La gryten stå på platen til det begynner å småkoke. Sett lokk på gryten og sett den inn i ovnen på 175. gtader.
  • La det stå i ovnen i minst et par timer til kjøttet er helt mørt.
  • Mens kjøttet steker, stek soppen i litt smør og  rens sjalottløken.
  • Brun løken i litt smør i en liten gryte og hell på 1 del hvitvin.
  • La løken trekke til den er helt mør, ca. 30 minutter.
  • Rett før servering tas gryten ut av ovnen og sopp og løk tilsettes.
  • Dersom sausen er veldig tyntflytende, ta av lokket og la den koke noen minutter. Er den for tyktflytende, tilsett litt kokende vann.

Server rykende varm med persille og kokte poteter.

Hei jeg leste oppskriften Boeuf bourguignon, og det så spennende ut. På slutten av oppskriften så snakker du om å tilsette en del hvitvin i den stekte løken. Hvor mye er en del? Dessuten så er ikke hvitvin med på listen over ingredienser. Litt forvirrende.

TAkk for at du sa i fra. Her hadde jeg jo glemt å liste opp hvitvinene i ingredienslisten. Nå har jeg rettet det opp i oppskriften over. Det skal være 20 gr smør og 1 dl hvitvin.
