For en tid tilbake skrev jeg om cannelloni med kjøttfyll og tomatsaus. Denne gangen har jeg blandet kjøtt og tomatsaus og fylt cannellonirørene med og laget en hvit saus med parmesan til å ha over i stedet.  Denne varianten minner veldig mye om lasagne, bare at i stedet for å ha pastaen lagvis, er den her rundt fyllet og ostesausen er på toppen. Men likheten er så stor at liker man lasagne så liker man denne varianten også. Det er jeg temmelig sikker på. Lillemor hadde besøk av en venninne, og de var i hvert fall enige om at dette var en god middag å varte opp med til barn.

Forrige gang jeg lagde cannelloni, brukte jeg pastaplater som jeg kokte og brukte til å rulle kjøttfyllet i. Denne gangen brukte jeg ferdige cannellonirør. Siden de var forkokte slapp jeg prosessen med å koke opp lasagneplatene, men de rørene jeg hadde fått tak i var nokså små i diameter, så det å få fyllet oppi rørene var et nokså stort prosjekt. Så hvilket alternativ som egentlig er best er jeg ikke sikker på. Kanskje det er mulig å få tak i rør med større diameter, og at det er det enkleste. Hvis ikke, tror jeg at jeg holder en knapp på lasagneplatene. Når det gjelder fyllet laget jeg det litt tørrere enn jeg ville gjort dersom det skulle være en vanlig kjøttsaus, fordi det er greit at fyllet er nokså fast inni rørene.

Ingredienser

  • 400 gr. karbonadedeig
  • 1 liten løk
  • 2 fedd hvitløk
  • 1 boks finhakkede tomater
  • 1/2 ts salt
  • nykvernet pepper
  • 2 ts oregano, tørket
  • 2 ts timian, tørket
  • --
  • 16 cannellonirør
  • --
  • 2 ss hvetemel
  • 2 ss smør
  • 1/2 l melk
  • 1/4 ts malt muskat
  • salt og pepper
  • 100 gr revet parmesan

Fremgangsmåte

  • Begynn med å lage kjøttsausen. Fres karbonadedeigen i litt olje i en stekepanne. Når den har blitt brun, tilsett finhakket løk og hvitløk og fortsett å steke til løken har blitt blank. Ha i tomatene og krydder og la det koke i minst 15 minutter uten lokk. Det skal koke så lenge at sausen er nokså tørr.
  • Sett oven på 200 grader (eller den temperaturen som står angitt  på pakken med cannellonirør).
  • Lag parmesansausen ved å smelte smør og rør inn melet. Hell i litt av  melken først og rør godt med en visp slik at det ikke blir klumper. Tilsett resten av melken og kok opp. Smak til med muskat, salt og pepper og la det koke noen minutter. Ha i halvparten av parmesanosten og rør til den har smeltet helt ned i sausen.
  • Fyll cannellonirørene med kjøttsaus og legg dem tett i tett i et ildfast fat.
  • Hell over parmesansausen og strø resten av parmesanen over.
  • Sett inn i ovnene og gratiner i ca. 1/2 time.

Server med en grønn salat og gjerne godt brød ved siden av. Velbekomme eller buon appetito som en italiener ville sagt.
