Jeg har lenge hatt lyst til å lage cannelloni, men har utsatt det igjen og igjen. Jeg så for meg at det ville være en del jobb og klissing med pastaplater og rulling av fyll inni dem. Til de som måtte lure, min bekymring for rullingen var helt ubegrunnet. Det gikk veldig greit.

Nå etter ferien hadde jeg altså bestemt meg for at det skulle skje, jeg skulle kaste meg over cannelloni-lagingen. Særlig Tuppen så frem til dette, men hadde allerede blitt skuffet et par ganger fordi prosjektet ble utsatt på grunn av travel timeplan. Men altså, i dag skulle det skje.

Mens jeg lå på stranden i sommer hadde jeg god tid til å tenke på mange forskjellige typer fyll. Jeg har sett mange varianter med kyllingkjøttdeig, men jeg ville heller lage en med kjøttfyll à la bolognese, og som tenkt så gjort.

I denne oppskriften skal det også være brødsmuler, sikkert opprinnelig for å drøye kjøttet, men det jevner jo også bra. Jeg hadde tilfeldigvis en gammel loffskalk liggende innerst i brødskuffen fra helgen. Den rev jeg på rivjernet. Men har du ikke en gammel loff liggende, noe jeg for øvrig heller ikke har så ofte, er jeg sikker på at det går utmerket med griljermel eller brødrasp fra butikken. For å binde kjøttfyllet litt sammen har jeg tilsatt ett egg.

Ingredienser

  • 400 gr karbonadedeig
  • 1 liten gul løk, finhakket
  • 2 fedd hvitløk, finhakket
  • olje til steking
  • 1 dl brødsmuler
  • 1 dl finhakket persille
  • 2 ts tørket oregano
  • 1 dl hvitvin (eller vann med litt hvitvinseddik)
  • salt og pepper
  • 1 egg, sammenpisket
  • 2 dl revet jarlsberg
  • --
  • 1 liten gul løk
  • 1 fedd hvitløk
  • olje til steking
  • 2 ss tomatpure
  • 0,5 dl hvitvin eller vann
  • 1 boks hakkede tomater
  • 1 ts timian
  • 1 ts oregano
  • salt og pepper
  • revet parmesan
  • --
  • 12 lasagneplater eller cannellonirør

Fremgangsmåte

  • Begynn med å koke lasagneplatene i ca. 5 minutter. Legg dem deretter separat på plastfolie og dekk over med plastfolie. Det er for at de ikke skal tørke igjen mens du lager kjøttfyllet.
  • Fres løk og hvitløk i en stekepanne til det har blitt blankt.
  • Tilsett karbonadedeigen og stek til den har blitt grynete.
  • Smak til med salt og pepper. Sett til siden for å avkjøles litt.
  • Rør inn brødsmuler, vin, revet ost og urter.
  • Tilsett til slutt et sammenpisket egg og bland alt godt sammen.
  • Lag tomatsausen ved å frese løk og hvitløk i oljen. Tilsett deretter tomatpureen og la det surre et par minutter under omrøring.
  • Ha i vinen/vannet og la det koke opp. Tilsett tomatene og urtene. La det koke et par minutter.
  • Legg litt kjøttfyll midt på hver lasagneplate på tvers. Rull deretter sammen hver rull tett og legg dem inntil hverandre i et ildfast fat.
  • Hell over tomatsausen og strø revet parmesan over.
  • Stek i ovnen på 180 grader i ca. 30 minutter.

Server gjerne med en grønn salat og godt brød til.
