Det er rart med det, men før man passerer konfirmasjonsalderen (og senere også for den saks skyld) smaker nesten all mat bedre når det er på spyd. Dette er en herlig thaiinspirert rett som passer ypperlig på grillen. Aller best blir det nok med en kullfyrt grill som gir en liten røksmak til kjøttet. En herlig blanding av koriander, sitrongress, hvitløk og chili gir uansett disse små grillspydene en deilig eksotisk smak.

Siden det er vinter nå og snøen laver ned, får jeg ikke grillet dem. Det går imidlertid fint å steke dem i pannen inne også. Selvsagt får de ikke den samme smaken som ute på en kullfyrt grill, men godt blir det allikevel. For å avhjelpe litt bruker jeg brunt sukker i marinaden. Det synes jeg har en nesten brent og mer rustikk smak enn vanlig sukker og dermed får marinaden litt mer smak og dybde. Utgangspunktet for oppskriften er hentet fra kokeboken Thaimani, men jeg har gjort noen små endringer.

Ingredienser

  • 600 gr svinefilet
  • 4 korianderrøtter
  • 3 fedd hvitløk
  • 2 stilker sitrongress
  • 2 små chili
  • 2 ss soyasaus
  • 3 ts brunt sukker

Fremgangsmåte

  • Begynn med å vaske og skrape korianderrøttene og del dem i grove biter.
  • Rens chiliene, og ta ut frøene. Skrell hvitløksfeddene. Ta de ytterste bladene av sitrongresset og kutt resten i mindre biter.
  • Ha alt i en morter og knus det til en masse. Bland inn soyasaus og sukker.
  • Skjær svinekjøttet i små terninger  1x2 cm.
  • Legg kjøtterningene i en bolle og hell marinaden over. Bland godt og la det stå kjørlig i et par timer.
  • Legg små grillspyd av tre i vann slik at de ikke så lett tar fyr på grillen. La dem minst ligge i 30 minutter før kjøttbitene tres på spydene.
  • Træ fire til fem kjøttbiter på hvert grillspyd.
  • Legg spydene på grillen og snu ofte. På grunn av sukkeret, kan de fort bli brent, så her gjelder det å følge med.

Server med kokt ris og friske grønnsaker til som en rett, eller sett dem på et koldtbord som en av flere retter.
