Det er sommeren som er høysesong for skalldyr her i Norge, men egentlig burde det være vinteren. Det er nemlig da skalldyrene er på sitt aller beste. Når vannet blir så kaldt forsvinner algene og det gir bedre levevilkår for skjellene. De får fastere kjøtt og smaker mer. Det er ikke noe galt i å nyte reker en varm sommerkveld på et svaberg, men går du for kvalitet bør du løpe til nærmeste velassorterte fiskedisk i disse dager og fråtse i skalldyr, for bedre blir de altså ikke. Skalldyr er vintermat!

I den siste uken har jeg hatt ekstremt mye å gjøre. Vi kjører et stort prosjekt på jobben og lansering er på mandag, så helgen har også stort sett gått med til jobbing. Da er det ekstra greit å kunne kose seg med deilig mat uten at det tar særlig tid å få på bordet. Skjell og reker krever minimalt med kokkelering for å smake godt. Noen av dem kan til og med spises rå, mens andre bare skal ha en kjapp tur i gryten sammen med litt urter, løk, olje og hvitvin. Her er hva Husbond og jeg trengte for å bli helt mette.

Ingredienser

  • 1/2 kg reker
  • 1/2 kg blåskjell
  • 4 østers
  • 2 kamskjell
  • --
  • Majones
  • --
  • dill
  • sitron
  • 2 fedd hvitløk
  • 2 sjalottløk
  • 1 dl hvitvin
  • 2 ss rødvinseddik
  • olivenolje havsalt
  • 1 liten baguette

Fremgangsmåte

  • Begynn med å forberede blåskjellene. Skrubb dem under rennende kaldt vann og ta bort de som er skadde eller ikke vil lukke seg.
  • Finhakk sjalottløk og hvitløk. Ta til side 1 ts finhakket sjalottløk (det er til østersene).
  • Fres hvitløken og løken i litt olje i en gryte som er stor nok til å romme alle blåskjellene. Hell hvitvinene over og ha i blåskjellene. Sett på lokk og la skjellene dampe til de har åpnet seg.
  • Legg blåskjellene i en bolle og hold kraften varm. Hell den over blåskjellene ved servering og bruk loffen til å suge opp kraften med.
  • Åpne østersene og legg dem på grov havsalt eller sammenkrøllet aluminiumsfolie, så de ligger støtt på fatet. Ha rødvinseddiken i en liten skål sammen med 1 ts finhakket sjalottløk. Drypp et par dråper østersen når den skal spises.
  • Kamskjellcarpaccio. Åpne kamskjellene og ta ut den hvite muskelen. Resten kan kastes. Skjær muskelen i så tynne skiver som mulig. Legg skivene utover det ene skjellet og drypp over sitronsaft og litt god olivenolje. Dryss over noen flak med maldonsalt og pynt med litt dill.

Anrett alt på et stort fat og server med loff, majones og kanskje en god hvitvin ved siden av. Velbekomme!
