Andebryst er en av favorittråvarene når Husbond og jeg skal hygge oss med en god middag sammen hjemme.  Vi har etter hvert forsøkt mange varianter, og jeg har kommet frem til at for meg må en rett med andrebryst inneholde noe syrlig som kan balansere det fete andekjøttet og gjerne noe sprøtt som kontrasterer det møre kjøttet. Det syrlige kan komme fra frukt som appelsin eller plommer eller det kan være å tilføre retten litt eddik. Det spør kan være grønnsaker som bare er kokt knapt møre, sprøstekte poteter eller litt fritterte rotgrønnsaker som garnityr.

I dag var det selleripuré, balsamicokokte sjalottløk og litt frittert selleristrimler som sto på menyen. De balsamicokokte sjalottløkene er en liten tålmodighetsprøve, for eddik/kraftblandingen skal koke inn til en tykk sirup. Men her må jeg rope varsko, for det er ikke langt fra deilig tykk sirup til brente løk. Det fikk jeg oppleve i dag, da jeg et lite øyeblikk var litt uoppmerksom. Og dermed ble de lekre løkene og den deilige sirupen plutselig forvandlet til en brent og nesten uspiselig klump.

Ingredienser

  • 1 andebryst
  • salt og pepper
  • --
  • 3 melne poteter
  • 1/4 sellerirot
  • 1,5 dl matfløte
  • 2 ss smør
  • 1 ts salt
  • --
  • 4-6 sjalottløk
  • 1 dl balsamicoeddik
  • 1 dl kalvekraft
  • 1 ss brunt sukker
  • --
  • 1 pk aspargesbønner
  • 1 ss smør
  • salt

Fremgangsmåte

  • Skjær litt selleri i så tynne strimler som mulig.
  • Varm litt rapsolje i en liten gryte og fritter selleristrimlene. Ta dem opp og la dem renne av på et kjøkkenpapir før de saltes. Sett til side.
  • Rut fettet på andebrystet, og gni det deretter godt med salt og pepper.
  • Legg andebrystet med fettsiden ned i en kald og tørr  stekepanne og sett på full varme. Stek andebrystet til fettlaget har blitt sprøtt og gyllent, ca 5 minutter.
  • Snu det og stek et par minutter til å den andre siden.
  • Sett andebrystet med steketermometer i inn i ovnen på 80 grader og stek til det har fått en kjernetemperatur på 60 grader. Ta det ut og la det hvile.
  • Samtidig som andebrystet settes i ovnen blandes balsamicoeddik, kraft og sukker i en gryte og kokes opp. Ha i de skrelte sjalottløkene og la det koke til det har blitt en tykk sirup og løken er blitt mør.
  • Skrell potetene og kok dem sammen med selleribiter til det er helt mørt. Mos og spe med fløte. Bruk gjerne mixmaster til å mose potet/selleriblandingen. Da blir den silkemyk og helt glatt. Ha i smøret og rør til det har smeltet inn. Smak til med salt og pepper.
  • Kok aspargesbønnene knapt møre i vann med 1 ss smør.
  • Skjær andebrystet i skiver og anrett på tallerken med løk, potet og selleripuée, aspargesbønner og frittert selleri.
