NOVEMBER – Selleri er en litt oversett grønnsak synes jeg, derfor har jeg lyst til å løfte den frem denne måneden.  Vi bruker sellerien i grønnsaksuppa eller sammen med de andre rotgrønnsakene som bakes i ovenen som tilbehør til søndagssteken. Men det er faktisk veldig mye mer selleri kan brukes til. Se bare nedenfor. Der har jeg samlet mine 5 beste oppskrifter med selleri. Selleri har en flott nøtteaktig smak som kan klare seg fint på egenhånde og kan spises både rå og varmebehandlet. Denne knollen inneholder dessuten svært få kalorier og nesten ikke stivelse. Det siste har medført at jeg ikke har klart å lage selleri fries, til tross for at jeg har prøvd flere fremgangsmåter.

Sammen med noen melne poteter blir dette en herlig høstsuppe som varmer og metter godt. Kantarellene løfter suppen litt opp fra en hverdagssuppe, men den kan selvsagt spises uten kantareller. Stek gjerne noen gresskar- eller solsikkefrø og ha på som knasende topping.

Dette er en herlig vri på den tradisjonelle waldorfsalaten. Her har jeg byttet ut eple og stangselleri med pære og rotselleri. Passer godt på et koldtbord.

Selleripuré

Dette er en nydelig puré som passer ypperlig til all slags vilt, lam og and. Det er så rart med selleri. Når den er rå er den ganske skarp i smaken, men når den kokes får den en helt annen smak – mild og litt nøtteaktig, men fortsatt med masse karakter.

Nok et nydelig tilbehør til høstens mange middager. Dette er etter min mening en verdig kandidat til å ta opp konkurransen med fløtegratinerte poteter som alles favoritt ved søndagsmiddagen.

Og så til slutt, får denne suppen representere alle supper og gryteretter der selleri, etter min mening, er en helt essensiell ingrediens. Selleri har en helt selvsagt plass i denne suppen slik den også har i kjøttsuppe og lapskaus og mange andre tradisjonelle norske retter.

Fun fact

Mens selleri er en veldig vanlig og kanskje betraktet som en litt kjedelig og hverdagslig grønnsak her hjemme, er den nesten ukjent i USA. Der er de svært glade i stangselleri, men altså nesten helt fremmed for denne knollen.

I Frankrike lager de en sellerimajones smakssatt ganske kraftig med sennep som er populær forrett om vinteren. Den spises også gjerne sammen med skinke.
