Waldorfsalat er en populær salat på de fleste koldtbord og selvsagt følge til kokt eller røkt skinke. Her kommer en oppdatert og litt friskere og lettere versjon av denne klassikeren. Det er veldig lite majones i denne salaten, men til gjengjeld er det masse sitron som gir en flott friskhet. Fennikel er kanskje ikke helt vanlig, men gir salaten enda en liten twist. De honningglaserte valnøttene – det er bare en ting å si om dem og det er nam nam.

Ingredienser

  • 1 ss honning
  • 1 ts smør
  • chilipulver
  • 100 gr sellerirot
  • 1 liten fennikel
  • 1 fast pære
  • 20 valnøtter
  • saft og skall fra 1/2 sitron
  • 2 ss majones
  • salt og pepper
  • grønn salat

Fremgangsmåte

  • Varm honningen og smøret i en liten gryte og tilsett chilipulver og valnøtter. Rør godt slik at valnøttene blir glasert over det hele.
  • Legg valnøttene over på et bakepapir slik at de blir kalde og honningen kan stivne litt.
  • Skjær selleriroten i fyrstikktynne strimler, fennikelen i tynne skiver og pæren i små terninger.
  • Riv skallet av en halv sitron og klem ut saften.
  • Bland saft og skall med grønnsakene og vend inn majonesen. Smak til med salt og pepper.
  • Vask den grønne salaten og legg den på et serveringsfat. Legg grønnsakene oppå salatbladene og bland forsiktig.
  • Pynt med valnøtter og fennikelgress.
