Papiret holder på fuktigheten og gjør at maten blir dampet og fuktigheten blir bevart i pakken. Jeg synes at dette er en super måte å tilberede særlig fisk på. Jeg skjærer grønnsaker i tynne biter og legger fisk oppå. Så har jeg litt krydder, smør og evt. vin før jeg lukker pakkene godt igjen og setter dem inn i ovnen. Når pakkene tas ut serverer jeg en pakke til hver og så åpner alle sin pakke ved bordet. Det er litt spennende med en sånn forundringspakke og den duften som sprer seg når pakken åpnes er helt vidunderlig.

Denne tilberedningsmetoden passer til all slags fisk og grønnsaker. Det viktigste med hensyn til grønnsakene er å skjær dem i små eller tynne nok biter slik at de blir ferdig dampet samtidig som fisken. Til rotgrønnsaker bruker jeg en mandolin til å skjære opp skiver på 2-3 mm. Det synes jeg er en passende tykkelse. Har du ikke mandolin, går det fint med kniv også. Soppen jeg brukte var en blanding av kantareller, steinsopp og traktkantareller. Traktkantarellene var tørket fra i fjor, men de bare la jeg i vann til de var blitt bløte igjen, og så stekte jeg dem som vanlig. Det gikk helt fint.

Ingredienser

  • 600 gr torskeloin
  • 500 gr skogssopp
  • smør til steking
  • 2 sjalottløk
  • 1 gulrot
  • 100 gr selleri
  • salt og pepper
  • 8 kvister timian (evt. litt tørket)
  • 1 ss smør pr pakke
  • 2 ss hvitvin eller litt sitronsaft pr. pakke
  • 4 ark bakepapir (ca 40x40 cm)

Fremgangsmåte

  • Sett ovnen på 180 grader.
  • Skjær fisken opp i 4 like store stykker. Dryss med salt og la fisken stå i 10 minutter.
  • I mens rens og skjær soppen i skiver og stek den i smør.
  • Skyll saltet av fisken, klapp den tørr og sett den kaldt til du er klar til å lage pakkene.
  • Skjær løken i tynne båter. Skrell gulroten og skjær den i tynne skiver og gjør det samme med selleriroten.
  • Fordel sopp og grønnsaker likt på de fire bakepapirene. Legg fisken oppå. Krydre med salt og pepper og legg en smørklatt på toppen. Drypp over hvitvin eller sitronsaft og legg på et par kvister timian, eller litt tørket timian. Brett papiret sammen og pass på at det blir helt tett. Bruk evt. stiftemaskin dersom det ikke vil holde seg lukket.
  • Legg pakkene inn i ovnen og stek i ca. 12 minutter. Litt mindre om det er tynne stykker og litt lengre om det er tykke stykker. De stykkene jeg bruke var omtrent 3 cm tykke.

Server med kokte poteter til. Kraften i pakken er en deilig saus. Vel bekomme.

Tips

Du kan bytte ut torsken med annen hvit fisk om du ønsker det. Du kan også bruke andre grønnsaker. Her er det i grunnen bare fantasien som setter grenser.
