Nå er det definitivt høst, ute drypper regnet og løvet har begynt å skifte farge. Jeg har det sånn at når høsten kommer får jeg lyst på rotgrønnsaker, lam, vilt, sauser og litt tyngre mat. Så kommer desember og lysten på julemat blir påtrengene. På nyåret er det litt lettere og ikke minst magrere mat som frister mest. Så kommer våren med lys og varme og suget etter friske grønnsaker blir sterkere. Det går mer i kylling og fisk også. Så kommer sommeren med mye salat, frukt, grønnsaker og grillmat og sjømat. Etter noen måneder med det, står høsten igjen for døren – og sånn går no åran. Det er den samme runddansen hvert år knyttet til sesong og tilgjengelighet av de forskjellige råvarene.

Men nå er det altså rotgrønnsaker som er favoritter. De er utrolig allsidige, de kan brukes hver for seg eller sammen. De kan kokes, dampes, bakes, stekes, spises rå, moses eller brukes til suppe. Grønnsaksuppe er en av mine favoritter. I denne suppen er det nesten slik at jo fler typer rotgrønnsaker jeg bruker, desto bedre blir suppen.

Ingredienser

  • 1/2 løk
  • 2 fedd hvitløk
  • 2 gulrøtter
  • 1/2 sellerirot
  • 4 poteter
  • 1 pakke bønner
  • 150 gr aspargesbønner
  • 1 purre
  • 1 ss olivenolje
  • frisk timian eller andre urter
  • 1,5 vann + grønnsaksbuljong

Fremgangsmåte

  • Hakk løk og hvitløk og fres det i olje sammen med frisk timian i en gryte.
  • Skjær poteter, gulrøtter og selleri i små terninger.
  • Ha rotgrønnsaker og grønnsaksbuljng i gryten og la det småkoke i 10-15 min.
  • I mens rens purren og skjær den og apsargesbønnene i små biter.
  • Tilsett purre, aspargesbønner og bønner fra pakken i suppen og kok til alt er mørt.

Server rykende varm med godt brød ved siden av.
