Pappadelle er veldig brede pastabånd, nesten som tagliatelle, bare mye bredere. I Italia brukes denne pastatypen tradisjonelt til kraftige sauser og ragu gjerne laget av vilt som villsvin. Dette er med andre ord en skikkelig tung mat. Det var egentlig ikke det jeg var på utkikk etter denne lørdagsformiddagen. Jeg hadde bare lyst på noe skikkelig godt som ikke tok lang tid å lage.

I kjøleskapet lå det en squash, og i den siste tiden har det florert med oppskrifter på squashsspspagetti. For å lage slike trenger man et spesielt instrument. Jeg er ikke så glad i å kjøpe ting som bare kan brukes til ett spesialiserte formål. Men sånn squashpasta hørtes jo godt ut… Min løsning ble derfor, å bruke en grønnsakskreller til å lage squashbånd i stedet. Det var veldig enkelt og raskt.  Og kjempegodt. I kjøleskapet hadde jeg en liten rest av en pastasaus fra tidligere i uken, og på et blunk hadde jeg en herlig, velsmakende og sunn lunsj. Pastasausen jeg brukte er en av mine favoritter, nemlig tomatsaus med bacon, løk og sjampinjong, men jeg tipper at de fleste pastasauser smaker godt til denne «pastaen». Jeg gleder meg i hvert fall til å eksperimentere med dette i tiden fremover.

Ingredienser

  • 500 gr sjampinjonger i skiver
  • 300 gr skivet bacon skåret i strimler
  • 1 middels stor gul løk
  • 2 fedd hvitløk
  • 1 boks hakkede tomater
  • 1/2 boks tomatpuré
  • 1 dl vann
  • 1/2 ts sukker
  • salt og pepper
  • 4 squash

Fremgangsmåte

  • Stek sjampinjongen i en stekepanne slik at den slipper vannet og blir myk. Ha det over i en gryte og stek bacon i den samme stekepannen.
  • Tilsett løken mot slutten av steketiden slik at det blir mykt og gyllen.
  • Ha løk og baconblandingen over i gryten med sjampinjongene.
  • Tilsett tomater, tomatpuré, vann og krydder og la det småkoke sammen ca. 5 minutter.
  • Bruk en grønnsakskreller eller en ostehøvel til å lage brede strimler av squashen. Ikke bruk den myke kjernen.
  • Kok opp lettsaltet vann. Ha squashstrimlene oppi vannet og la dem koke i 2-3 minutter. Hell av vannet og drypp over litt god olivenolje. Det siste er for smakens skyld og ikke noe annet.

Server med pastasausen og gjerne også revet parmesan. Vel bekomme.
