Denne middagsretten har jeg lært av mamma en gang på midten av åttitallet. Jeg vet ikke hvor hun hadde den fra, men mistenker at den kommer fra en eller annen matspalte i et blad eller en avis. Ingrediensene er nok de samme selv om jeg er ganske sikker på at mengdeforholdet mellom dem var et annet. Det gjør ikke så mye, for det er kombinasjonen som er god. Denne retten med spagetti med tomat, bacon og sjampinjong er rett og slett en liten perle i spagetti-repetoaret.

Den gangen på åttitallet var det en temmelig eksotisk rett, så den gjorde et solid inntrykk på en nokså ung matentusiast. Siden den gang har jeg laget den med jevne mellomrom – mer i de siste årene enn de første. Uansett er det en veldig god kombinasjon av salt bacon, søte tomater, sjampinjong og løk.

Ingredienser

  • 500 gr sjampinjonger i skiver
  • 300 gr skivet bacon skåret i strimler
  • 1 middels stor gul løk
  • 2 fedd hvitløk
  • 1 boks hakkede tomater
  • 1/2 boks tomatpuré
  • 1 dl vann
  • 1/2 ts sukker
  • salt og pepper
  • Spagetti til 4 personer

Fremgangsmåte

  • Sett over vann til spagettien og kok spagettien mens du lager sausen.
  • Stek sjampinjongen i en stekepanne slik at den slipper vannet og blir myk.
  • Ha det over i en gryte og stek bacon i den samme stekepannen.
  • Tilsett løken mot slutten av steketiden slik at det blir mykt og gyllent.
  • Ha løk og baconblandingen over i gryten med sjampinjongene.
  • Tilsett tomater, tomatpuré, vann og krydder og la det småkoke sammen ca. 5 minutter.

Server gjerne med en grønn salat ved siden av.
