I natt har Lillemor hatt en overnattingsgjest, og siden Lillemor er veldig flink til å spørre om å få det hun har lyst på, ble det amerikanske pannekaker til frokost i dag.

Når sant skal sise er det å steke pannekaker noe jeg kun har gjort én gang i mitt liv. Grunnen til at det ble med den ene gangen er at jeg og pannekakesteking ikke akkurat er gode venner. Og det er her de amerikanske pannekakenen kommer inn i bildet. De er jo så små at det er veldig lett å snu dem. Dermed kan også jeg lage pannekaker. Dessuten er de så små at det går an å steke flere i pannen samtidig, og da går det jo fortere.

Men amerikanske pannekaker er gode og servert med friske eller nyrørte bær er de aldelesnydelige, myke, lette og med en deilig smak av kardemomme.

Ingredienser

  • ca. 20 stk
  • 2,5 dl hvetemel
  • 1 ss sukker
  • 2 ts bakepulver
  • 1/2 ts kardemomme
  • 2,5 dl melk (evt. soyamelk)
  • 2 egg
  • 2 ss rapsolje

Fremgangsmåte

  • Bland de tørre ingredienene og deretter de våte for seg.
  • Bland de to og rør godt sammen.
  • La røren stå å svelle i minst 30 minutter.
  • Stek pannekakene på middels varme. Dersom du har en god teflonpanne trenger du ikke bruke fett i pannen i det hele tatt. Faktisk blir pannekakene penere uten fett i pannen. Legg ca. 1 ss røre (pr. pannekake)  i pannen og stek til det viser seg små bobler. Snu og stek til de er gylden på den andre siden også.

Server med lønnesirup som amerikanerne eller med nyrørt blåbørsyltetøy. mmm, velbekomme.

Det vet jeg faktisk ikke, jeg pleier å steke alt når jeg først er i gang. Og det pleier å gå ned rubbel å bit. Men jeg tipper at den vil holde seg fint i et par dager dersom den oppbevares i en boks eller lignende i kjøleskapet.
