Fiskepinner er en middagsrett som er populær i de fleste barnefamilier. Og vår familie er ikke noe unntak i så måte. Ofte er fiskepinner et valg når Lillemor skal lage middag, og da snakker vi ekte kjøpepinner. Det er ikke akkurat min favoritt, men har jeg delegert ansvaret, så får jeg spise det som kommer på bordet. Det er jo det jeg forventer av mine barn, så da så.

Skal jeg lage fiskepinner derimot går jeg for den hjemmelagde varianter, som nok inneholder mer fisk enn kjøpevarianten. Men godt blir det allikevel. I dag har fiskepinnene fått en litt asiatisk vri med sesamfrø i paneringen og agurk og mangosalsa som tilbehør.

Ingredienser

  • 500 gr torskefilet uten skinn og ben
  • 2 dl griljermel
  • 4 ss sesamfrø
  • 2 ss havrekli
  • 1 dl hvetemel
  • 1 ts salt
  • 2 egg
  • smør/margarin til steking
  • --
  • 1/2 slangeagurk
  • 1 mango
  • 1/2 rødløk
  • 1 rød chili
  • 1/2 potte koriander
  • saften fra 1 lime
  • salt og pepper

Fremgangsmåte

  • Begynn med å lage salsaen. Skjær agurken i små terninger på ca. 1/2 x 1/2 cm. Skjær mangoen i terninger på samme størrelse. Finhakk løken og chilien. Klem over limesaft og bland alt godt. Sett til side.
  • Skjær fisken i strimler.
  • Bland mel og salt i en plastpose.
  • Pisk eggene sammen og ha dem i en bolle.
  • Bland griljermel, sesamfrø og havrekli i en annen bolle.
  • Varm smøret i en stekepanne. Ha fisken i plastposen og lukk godt. Rist slik at alle fiskebitene blir dekket av hvetemel.
  • Ha noen fiskebiter av gangen i i egget og deretter i brødsmuleblandingen.
  • Når alle sider er dekket med brødsmuler legges fiskepinnene i stekepannen og stekes til de er gylne utenpå. 2-3 minutter på hver side.

Server fiskepinnene med salsaen, søt chilisaus og gjerne ovnsbakte poteter. Vel bekomme.
