Er du så heldig at du vet hvor du kan finne kantareller? Jeg jobber med saken, og går stadig på tur med kurv i skogen i håp om å komme over mengder av kantareller eller annen god sopp. Stort sett finner jeg en og annen sopp, men for et par uker siden kom jeg over et fint lite felt med deilige kantareller. De ble selvsagt med hjem og måtte tilberedes med all den omhu og kjærlighet jeg kunne oppmønstre. Resultatet ble til denne retten. Finner du ikke kantareller i skogen, finnes de også å få kjøpt i velassorterte dagligvareforretninger. Det tyr jeg til når lykken ikke står meg bi i skogen.

Sopp og bacon er ingen dum kombinasjon, så det måtte jeg bruke. De fikk følge av timian. Løk og hvitløk er en selvfølge og fløte er aldri dumt og det er hvitvin heller ikke. Sånn ble retten til. Litt av alt det gode.

Ingredienser

  • 300 gr bacon
  • 500 gr kantareller
  • 1 sjalottløk
  • 1 fedd hvitløk
  • 2 ss smør til steking
  • 2 kvister fersk timian
  • ½ dl hvitvin (kan erstattes av vann og en dæsj sitronsaft)
  • 2 dl kremfløte
  • ½ ts salt
  • nykvernet pepper

Fremgangsmåte

  • Skjær baconet i småbiter og stek det i en stekepanne til det har blitt sprøtt. Ta det opp og la det renne av på et kjøkkenpapir.
  • Rens kantarellene godt og skjær opp i mindre biter.
  • Finhakk sjalottløken og hvitløken.
  • Smelt smøret i en stekepanne og fres løk og hvitløk til det har blitt blankt og mykt.
  • Tilsett soppen og stek til den har blitt myk.
  • Ha oppi timian og hell over vinen. Kok til vinen nesten har kokt inn. Tilsett fløten og smak til med salt og pepper.
  • La det surre til sausen har tyknet litt.
  • Kok pastaen etter anvisning på pakken samtidig som du lager sausen.
  • Når pastaen er ferdigkokt, hell vannet av og bland inn soppsausen og baconet.

Server med en gang, gjerne med et dryss med parmesan over og en grønn salat ved siden. Vel bekomme.
