Det er ikke alltid jeg har så mye tid til rådighet for å lage middag, men jeg har jo lyst til å lage en skikkelig middag for det. Da kommer denne suppen inn i bildet, for den inneholder både sesongens deilige rotgrønnsaker og fisk. Og det er virkelig en rask fiskesuppe. Riktignok er det noen grønnsaker som skal kuttes opp, og det tar jo litt tid, men ikke mye. Er det riktig dårlig med tid går det jo også an å bruke en pose med frosne grønnsaker som er ferdig oppskåret. Ett av triksene for at det skal gå fort er å kutte grønnsakene i små biter. Jo mindre biter, desto fortere blir de kokt.

Jeg har brukt torsk som er frosset i porsjonsstykker. Disse tiner jeg halvveis før jeg skjærer dem i tynne skiver (3-4 mm). Det gjør at fisken bare kan legges i suppen ett minutter eller to før servering. Fisken blir klar så snart den kommer i den varme suppen, og bør derfor ikke ligge for lenge i suppen før den serveres. Da blir torsken nemlig tørr og kjedelig.

Til å jevne suppen har jeg brukt kremfløte. Den skiller seg ikke på samme måte som matfløte kan gjøre når den koker, derfor liker jeg altså best å bruke kremfløte. Vil du ha en litt mer syrlig smak, kan du vurdere å bytte ut halvparten av fløten med rømme.

Ingredienser

  • 1,5 l fiskebuljong (vann + terninger)
  • 3 gulrøtter
  • 1/4 sellerirot
  • 1 purre
  • 4 poteter
  • 3 dl kremfløte
  • 500 gr torskefilet
  • ferske urter, kan sløyfes

Fremgangsmåte

  • Sett over en kjele med vannet.
  • Mens vannet koker opp, skjær poteter, gulrøtter og selleri i små terninger.
  • Når vannet koker tilsettes buljongterninger og grønnsaker.
  • Skjær purren i ringer og ha i når de andre grønnsakene har kokt i fem minutter. Tilsett fløten samtidig.
  • Skjær torsken i tynne skiver (3-4 mm).
  • Når grønnsakene er møre tas kjelen av varmen og fisken legges oppi.
  • Dryss evt. over friske urter. Jeg har brukt bjørnerot.

Server straks, gjerne med brød ved siden av. Vel bekomme.

Tips

Det går fint å bruke andre grønnsaker også, som for eksempel persillerot, pastinakk, kålrot eller fennikel.
