Ute er det blitt skikkelig vinter. Det er godt med snø og mange kuldegarder. Da er det ikke mye jeg kan tenke meg som er bedre å spise enn den deilig, rykende varm bolle med suppe. Ukens vegetarmiddag er en byggrynsuppe på italiensk, det vil si, en fornorsket versjon av den tradisjonelle italienske minestra di farro. Suppen er en robust grønnsaksuppe med byggryn i. Italienerne bruker et kornslag som heter farro. Det er nokså dyrt og vanskelig å få tak i, men hele byggryn eller spelt fungerer helt utmerket også.

Mange forbinder italiensk mat med pasta, men italienerne er flinke til å bruke bønner, linser og hele gryn i maten der vi automatisk ville brukt poteter. Det er denne suppen et godt eksempel på. Med hele byggryn oppi blir suppen veldig mettende helt uten poteter eller pasta. Tradisjonelt lages nok suppen med kjøttkraft, men siden dette er en vegetarisk versjon, bruker jeg grønnsaksbuljong i stedet. Dersom du ikke er så nøye på det med vegetar, er det sikkert kjempegodt å lage den med kjøttkraft og kanskje litt pancetta eller bacon også. Men det er absolutt ikke nødvendig.  Mange varianter har også bønner på ingredienslisten, og da helst borlottibønner. Ha gjerne det oppi også, eller andre bønner om du ikke får tak i borlottibønner.

Når suppen serveres kan hver enkelt rundt bordet rive parmesan oppå sin porsjon. Osten smelter og blander seg med suppen og gir en deilig litt nøtteaktig ostesmak. Her er min variant av Minestra di Farro Lucchese. Kos deg med den i vinterkulden du.

Ingredienser

  • 1 purre
  • 2 fedd hvitløk
  • 2 ss olivenolje
  • 1/2 glass tomatpure
  • 2 l vann
  • 2 grønnsaksbuljongterninger
  • 1,5 dl byggryn
  • 2 gulrøtter
  • 1 pastinakk
  • 1 liten sellerirot
  • 2 ts tørket oregano
  • 200 gr grønnkål
  • 1 ts salt
  • nykvernet peppe1r
  • --
  • parmesan til servering

Fremgangsmåte

  • Skjær purren på langs i fire og skjær i 3-4 mm tykke skiver.
  • Finhakk hvitløken.
  • Varm oljen i en gryte og fres purre og hvitløk til det er blankt.
  • Skyll byggrynene og ha dem i gryta sammen med tomatpureen. Fres et par minutter.
  • Tilsett vann, oregano og buljongterninger og la det koke i ca. 20 minutter.
  • Kutt gulrøtter, pastinakk, sellerirot i terninger og ha det i gryten og kok til alt er mørt.
  • Del grønnkålen i små biter og ha den oppi rett før servering.
  • Smak suppen til med salt og pepper.

Server suppen rykende varm med rikelig revet parmesan på toppen. Spis gjerne brød ved siden av.
