Nå er det skreisesong og dermed god tilgang til denne delikatessen. Jeg hadde planlagt en bedre middag med skrei i hovedrollen. Det er imidlertid ikke alltid det går helt som man planlegger. Det oppdaget jeg i dag. Planen var altså  å lage en deilig skreimiddag, men så var de utsolgt for skrei da jeg kom i butikken. Da ble det torsk i stedet. Ikke et vondt ord om torsk, men altså, «not according to plan». Så selv om jeg har brukt vanlig torsk i denne retten, er det absolutt ikke noe i veien for å bruke skrei.

Som tilbehør til fisken  er det semitørkede tomater – tomater som er tørket i ovnen. Når tomatene stekes ved lav temperatur i lang tid utvikler de en svært søt og konsentrert smak som passer godt til det tandre fiskekjøttet. Stekt bacon gir en god salt smak, sjampinjongene et jordlig element, mens sukkerertene er sprø og friske. Alt i alt ble det en deilig rett med mange smaker som komplimenterer fisken og hverandre på en flott måte.

Ingredienser

  • 600 gr torskeloin
  • 2 ss salt
  • 1 pakke cherrytomater
  • 1 pakke sukkererter
  • 250 gr aromasopp eller sjampinjong
  • 1 pakke bacon i skiver
  • olivenolje
  • salt og pepper

Fremgangsmåte

  • Begynn med tomatene. Sett ovnen på 130 grader. Skjær tomatene i to og legg dem med snittflaten opp i en ildfast form. Dryss med litt salt og pepper og ringle over litt olivenolje. Bak tomatene i ovnen minst en time og gjerne lenger.
  • Skjær fisken i porsjonsstykker og dryss med rikelig salt.
  • La fisken ligge slik i ca. 10 minutter. Skyll av saltet og klapp stykkene tørre.
  • Legg i kjøleskapet til de skal stekes.
  • Rens og skjær sukkerertene i to og sjampinjongene i kvarte.
  • Stek bacon og sett til side.
  • Når tomatene snart er ferdige stekes soppen og deretter fisken. Siden fisken har ligget med salt en liten stund skal den ikke saltes mer, men litt nykvernet pepper er godt.
  • Varm opp litt olje i en stekepanne og stek fiskestykkene på høy varme på begge sider. Fisken er ferdig etter ca. 5 minutter.
  • Den skal ha fin stekeskorpe på utsiden og nesten begynne å flake seg om man trykker litt på et stykke med fingrene.
  • Mens fisken stekes forvelles sukkerertene i lettsaltet vann i 1 minutt.
  • Legg fisken midt på tallerkenen og dander bacon, tomater, sukkererter og sjampinjong rundt.
  • Drypp over litt god olivenolje.
