Supper er deilig mat, og særlig når været utenfor er skikkelig guffent. I dag var det grått og sludd ut hele dagen. Inne var det bedre. Det er tross alt ikke hver dag et VM avsluttes med gull til Norge på fem-mila, men det skjedde i dag. Hipp, hipp hurra! Så når dagen brukes til TV-titting, er det greit med en middag som går raskt å få i stand. I dag ble det en deilig aromatisk suppe med smaker fra Asia.

På markeder i Thailand og Vietnam serverer de ofte supper på markedene. Da har de gjerne risnudler og forskjellig tilbehør som man kan velge blant. Dette legges i kundens suppebolle og glovarm kraft helles over. På bordene står det ofte forskjellige sauser man kan bruk for å smake til suppen om man ønsker det. Suppen i dag serveres på denne måten. På bordet settes forskjellig tilbehør frem, så kan alle forsyne seg med det de liker, og så helles varm buljong over til slutt. Så er det bare å slurpe i seg suppen.

Ingredienser

  • 500 gr. svinefilet
  • 2 ss hoisin saus
  • 25 gr ingefær i tynne skiver
  • 2 fedd hvitløk
  • 1 ss sesamolje
  • 1 ts kinesisk five-spice
  • 1,5 liter hønsebuljong
  • 3 ss soyasaus
  • 1 potte koriander, blader og stilker for seg
  • 200 gr risnudler
  • 3 vårløk
  • 100 gr spinat
  • tørket chili

Fremgangsmåte

  • Sett ovnen på 200 grader.
  • Pensle svinefileten med hoisin sausen og stek fileten i ca. 25-30 minutter.
  • Den skal ha en kjernetemperatur på ca. 63 grader.
  • Mens kjøttet steker snittes hvitløk og ingefær i tynne skiver. Fres det sammen med five-spice i sesamoljen i ca. 1 minutt.
  • Tilsett hønsebuljong, korianderstilker og soyasaus og la det trekke i ca. 10 minutter.
  • Kok risnudlene som beskrevet på pakken.
  • Rens spinaten og skjær vårløken i tynne ringer.
  • La kjøttet hvile i 5 minutter før det skjæres i skiver.
  • Sil kraften.
  • Server kraften glovarm og legg nudler, vårløk, spinat og korianderblader i forskjellige skåler.
  • La hver enkelt legge risnudler, grønnsaker og kjøtt i suppeskålen sin og hell over varm kraft.

Dryss over tørkede chiliflak eller smak til med mer soya eller chilisaus om ønskelig. Vel bekomme.

Herlig nudelsuppe! Dette går ned på høykant hjemme hos oss. Nudler og supper ia lle former og varianter. Også praktisk hverdagsmat.
