Ukens vegetarrett består av en suppe som er like god som den er enkel å lage. I denne suppe er det søtpoteten som virkelig får anledning til å skinne. Faktisk inneholder suppen lite annet enn søtpotet kokt i grønnsaksbuljong og smakssatt med litt forskjellig.

Søtpoteten har jeg et kjærlig forhold til. Da Lillemor var liten hadde hun en aldeles sjarmerende liten potetnese. Hun fikk derfor kjælenavnet Søtpoteten en periode. Jeg tror ikke hun noen sinne har forstått hvorfor hun hadde nettopp dette kjælenavnet. Men i hvert fall forbandt hun grønnsaken med noe veldig positivt. Hun ble derfor ganske skuffet første gang hun smakte den og kunne fastslå at det bare var en vanlig grønnsak. Riktignok med en ganske søt smak, men dog en grønnsak.

Dersom det med vegetar ikke er så nøye, er jeg sikker på at suppen smaker utmerket med litt stekte reker eller kylling oppi. Server den gjerne med bruschetta ved siden av slik jeg gjorde.

Ingredienser

  • 2 sjalottløk
  • 2 søtpoteter
  • 2 fedd hvitløk
  • 2 ss olivenolje
  • 1 l grønnsaksbuljong
  • 1-2 ts sambal oelek
  • saften fra 1 sitron
  • salt og pepper

Fremgangsmåte

  • Hakk løk og hvitløk og skjær søtpoteten i terninger.
  • Varm oljen i en gryte som er stor nok til to liter.
  • Fres grønnsakene i et par minutter.
  • Tilsett buljongen og kok til søtpotetene er møre.
  • Kjør suppen glatt med en stavmixer eller i en blender.
  • Smak suppen til med sambal oelek, sitron, salt og pepper. Dersom suppen blir veldig tyktflytende, tilsett litt mer vann.

Server med brød eller bruschetta ved siden av.
