Av og til er det verken dyre ingredienser eller mye tid som skal til for å lage et godt måltid. Potet og sellerisuppe med kantareller er et godt eksempel på det. Suppen er fløyelsmyk og innsmigrende, men har allikevel karakter. Sammen med smørstekte kantareller blir denne suppen et lite festmåltid i seg selv.

For å unngå at suppen blir tapetklister, er det viktig å ikke tilsette saltet før suppen er ferdig. Jeg vet ikke hvorfor, men har selv erfart at dersom jeg tilsetter saltet mens potetene koker blir suppen, eller potetstappe om det er det du lager forvandlet til tapetklister så snart jeg moser det. Derfor venter jeg med saltet til suppen er helt ferdig før jeg rører det forsiktig inn. Men det er viktig å ikke kutte ut saltet helt, for da blir suppen aldeles smakløs. Et par skviser med sitron til slutt er også med på å løfte smaken.

Ingredienser

  • 2 store bakepoteter
  • 1 selleri
  • 1 liten løk
  • 1 l vann
  • 2 dl kremfløte
  • 1 ts salt
  • 1 ts sitronsaft
  • 200 gr kantareller
  • 2 ss smør
  • 2 ss solsikkekjerner
  • 1 ts olje
  • salt
  • persille

Fremgangsmåte

  • Skrell potetene og selleriroten og del dem i mindre biter. Rens løken og grovhakk den.
  • Legg grønnsakene i en gryte og hell på vannet. Kok opp og la det småkoke til alt er helt mørt.
  • Rens soppen og stek den i smør.
  • Rist solsikkefrøene i litt olje til de blir gylne. Legg over på et papir slik at overflødig fett kan renne av.
  • Kjør suppen til en helt jevn blanding med en stavmixer. Alternativt kan du bruke en blender, men gjør det da i flere små porsjoner.
  • Hell fløten i suppen og varm opp. Smak til med salt og sitronsaft.
  • Server suppen med kantarellene og solsikkefrøene i. Drypp gjerne litt god olivenolje over og dryss på litt persille.

Tips

Har du ikke kantareller, går det fint an å lage små terninger av poteter som stekes i pannen til de er sprø og helt gjennomstekt. Disse potetbitene kan fint erstatte kantarellen.
