Her får du oppskrift på en skikkelig silkemyk og innsmigrende selleripuré. Smaken er helt nydelig, men det er konsistensen som overrasket meg mest. Fordi det er så lite stivelse i selleriroten, trodde jeg at puréen ville bli litt grynete og kanskje skille seg litt. Men der tok jeg feil gitt. Den ble altså helt glatt og ja, som sagt silkemyk.

I rå tilstand kan selleri være litt skarp, men når den blir kokt forsvinner all skarpheten og i stedet får den en nesten litt nøtteaktig og mild smak. Selleripuréen passer kjempegodt til all slags vilt, and, lam og sikkert mye mer også, ja som stekt fisk for eksempel. Det er bare fantasien som setter begrensninger her altså.

Med bare tre ingredienser er det igrunnen lite som kan gå feil når du lager selleripuré.  Og det er jo litt av sjarmen med denne puréen. Velkokt selleri, fløte og salt. That’s it. Dette må du altså bare prøve.

Ingredienser

  • 600 gr sellerirot
  • 2 dl fløte
  • 1/2 ts salt

Fremgangsmåte

  • Rens selleriroten og skjær i små biter.
  • Kok sellerien i vann til den er fullstendig mør. Ca. 15 minutter.
  • Hell av kokevannet og la sellerien dampe seg tørr.
  • Tilsett fløten og kjør til en helt glatt puré. Bruk stavmixer eller blender.
  • Smak til med salt.

Server straks som tilbehør til din favoritt kjøtt eller fiskerett. Vel bekomme.
