Basert på en ørliten misforståelse, ble det fajitas til middag i dag. Egentlig skulle Tuppen ha laget middag og hadde bestemt seg for å lage pitabrød med kjøttsaus. Idet jeg skulle i butikken å handle inn, sa hun imidlertid fajitas – og dermed ble det fajitas. Og for all, det er ingen ting galt med fajitas. Faktisk synes jeg det passer riktig så godt med litt sterk og smaksrik mat fra et solrikt land nå som sprengkulada har lagt seg over store deler av landet vårt.

Det enkleste når man skal lage fajitas, er kanskje å åpne en pose med krydder fra butikken og ellers følge oppskriften bakpå. Her har jeg droppet butikkalternativet og blandet mitt eget fajitakrydder. Det er slett ikke noe hokus pokus ved det og smaken blir aldeles utmerket. Dessuten, på den måten vet jeg i hvert fall hva vi spiser. Hva de fabrikkproduserte krydderblandingene inneholder er ikke alltid så lett å bli klok på. Jeg skulle gjerne ha brukt røkt paprikapulver i denne krydderblandingen, men det hadde jeg ikke, så da ble det vanlig paprikapulver i stedet. Men jeg tror det røkte ville gitt en enda bedre smak, så har du det ville jeg definitivt gått for det.

Ingredienser

  • 4 kyllingfileter
  • 2 søte paprikaer
  • 1 stor løk
  • 2 ts paprikapulver
  • 1 ts spisskummen
  • 1ts salt
  • rikelig nykværnet pepper
  • 1 lime, saften
  • 2 ss olivenolje
  • 1 finhakket chili uten frø (kan sløyfes)

  • 8 tortillalefser
  • salat
  • frisk koriander
  • guacamole
  • tomatsalsa

Fremgangsmåte

  • Skjær løken i tynne båter og paprikaen i strimler som er omtrent like lange som løkbåtene.
  • Skjær kyllingfileten i strimler.
  • Legg kyllingstrimlene og grønnsakene i en bolle.
  • Bland sammen paprikapulver, spisskummen, salt og pepper og dryss det over kjøttet og grønnsakene.
  • Tilsett saften fra limen og olivenoljen og bland alt godt sammen.
  • La det stå i ca. 15 minutter.  Imens lage guacamole og tomatsalsa.
  • Stek kylling og grønnsaksblandingen ved høy varme i en stekepanne.
  • Det kan være en fordel å steke i porsjoner slik at stekepannen ikke blir alt for full.

Varm samtidig opp tortillalefser og server med rømme, salat, guacamole og tomatsalsa.
