Skrei med chorizo er en spennende kombinasjon. Den fine, delikate fisken får en flott kontrast av den salte, sprøstekte, krydrede pølsen. Sammen med fisken og chorizoen serverer jeg potet og sellerimos. Det synes jeg er en fin, myk kontrast. Du kan selvsagt velge å lage vanlig potetstappe, men jeg synes det er en litt spennende vri med sellerirot oppi.

Ingredienser

  • 800 gr skreiloin
  • olje/smør til steking
  • 500 gr melne poteter
  • 300 gr sellerirot
  • 2 dl kremfløte
  • 2 ss smør
  • 100 gr smeltet smør
  • 150 gr chorizo
  • salt

Fremgangsmåte

  • Skrell poteter og selleri og del i biter og kok i vann UTEN salt til.
  • Mens potetene koker, skjær chorizoen i små biter og stek i litt av smøret til det får en litt mørkere farge og blir sprøtt. Smelt inn resten av smøret og sett til side.
  • Skjær fisken i porsjonsstykker og dryss over litt salt. La fisken ligge med saltet i ca. 10 minutter.
  • Stek fisken først med skinnsiden opp på ganske høy varme et par minutter til den har fått litt farge.
  • Sett ned temperaturen, snu fisken, legg på lokk og stek til fisken begynner å flake seg. Dette går fort, så sjekk etter ca. 3 minutter.
  • Hell av vannet av potetene og damp dem til de er tørre.
  • Mos potet og selleriblandingen grovt eller fint alt etter hvordan du liker den, og bland inn fløten og smak til med salt og pepper. Rør gjerne inn en smørklatt også for ekstra god smak.
  • Anrett på tallerkener og dryss over rikelig finhakket bladpersille.

Spennende vri på skreimåltid.. Vi hadde skrei med bacon i går. Potetstappe med sellerirot må jeg prøve senere.

Hei Audhild, skrei er nydelig og servert med bacon er en favoritt her hjemme også, men det er jo gøy å prøve noe nytt innimellom. Du har jo sikkert skjønt hvordan jeg er (he he). Potetstappe med sellerirot er veldig godt så det kan du trygt prøve en gang det passer seg sånn.
