Egg i skjærsilden eller uovo in purgatorio som det heter på italiensk, er en deilig enkel rett. Det er rett og slett egg som er kokt i en deilig, hot tomatsaus. Denne retten er en del av cucina povera-tradisjonen (fattigmansmat). Det er mat som ble laget med få, enkle og billige råvarer av fattigfolk. De måtte ofte klare seg med det de kunne dyrke på en liten jordlapp, og kjøtt var forbeholdt de store anledningene. Men selv om maten var enkel, betyr det ikke at smakene behøvde å være dårlige eller kjedelige. Og det er egg i skjærsilden et godt bevis på, for her er det masse smak. Mens tomatsausen er varm som i helvete er eggene deilig bløte og kremete.

Så var det skjærsilden, da. Navnet på retten kommer nok at at det ble brukt temmelig mye chili. Hvor varmt det er i skjærsilden bestemmer du selvsagt selv. Selv synes jeg det er deilig at det er skikkelig hot, men for all del, juster mengden chili til det nivået du selv liker.

Dette er en super lunsjrett, og det er sånn jeg har spist den. Derfor er oppskriften nedenfor beregnet på 1 person. Du kan gjerne gange opp for å servere til flere, men hold et øye med antall tomatbokser. Du trenger nok ikke 4 bokser til 4 personer.

Egg i skjærsilden ligner ganske mye på shakshuka, men er en litt enklere versjon.

Ingredienser

  • 1 boks tomater
  • 1 liten løk
  • 1 fedd hvitløk
  • 1 rød chili (eller så mye du vil ha)
  • 2 ss olje til steking
  • salt og pepper
  • (1 ts sukker)
  • 2 egg
  • persille eller annet grønt til pynt

Fremgangsmåte

  • Kutt løken i små terninger og finhakk hvitløk og chili.
  • Fres løk, hvitølk og chili i oljen i en liten stekepanne eller gryte til løken har blitt blank og myk.
  • Tilsett tomatene og la det småkoke i ca. 10 minutter.
  • Smak til med salt, pepper. Tilsett evt. sukker om du synes sausen trenger å rundes litt av.
  • Knekk eggene i tomatsausen og legg på lokk.
  • La eggene trekke i ca. 5 minutter. Hviten skal være stiv, men plommen fortsatt myk.
  • Dryss over litt finhakket grønt.

Server straks, gjerne med litt brød  og salat ved siden av, så blir det straks et skikkelig måltid.

Tips

Gang gjerne opp oppskriften for flere, men vurder mengden tomater. Det er nok ikke nødvendig med 4 bokser til fire personer 🙂
