Fisk er skikkelig godt og enkel hverdagsmat. Faktisk er det som regel langt raskere å trekke eller steke fisk enn kjøtt. Akkurat det er jo noe å tenke på når man haster hjem fra jobben og skal ha en middag kjapt på bordet. Og kjøper du noen av de fine, ferske fileter i butikken, så er problemet med ben også borte. Er du så heldig å ha en dampovn på kjøkkenet er det en veldig fin måte å tilberede fisk på. Her får du en oppskrift på torsk i dampovn med sitronsaus og persillepoteter ved siden av.

Å dampe fisk i ovnen på denne måten er utrolig enkelt og raskt. Det er derfor en god idé å bruke steketermometer for å passe på at ikke fisken blir dampet for lenge. Men passer du på tiden, vil du bli belønnet med en helt perfekt, saftig fisk. Torsken er ferdig når den når 55 grader.

Til fisken serverer jeg en sitronsmørsaus som smaker veldig friskt og passer ypperlig til torsken. Jeg serverer også nykokte poteter som er rullet i rikelig med persille. Setter du en frisk salat på bordet, har du et supert måltid på kort tid. Vel bekomme. Selv om denne retten er veldig enkel å lage, er den raffinert nok til å bli servert som gjestemat. Du kan for eksempel halvere porsjonene og servere den som en forrett med et godt glass hvitvin ved siden av.

Har du ikke dampovn, er det ingen grunn til å fortvile. Du kan fint lage denne retten ved å sette en damprist i en vanlig kjele med lokk og dampe fisken på den måten. Tiden vil selvsagt variere etter hvor tykke fiskestykkene er, men med en 2-3 cm tykke stykker vil det kanskje ta omtrent 10 minutter. Du kjenner at fisken er ferdig når den gir litt etter og flaker seg når du tar på den. Du kan selvsagt bruke steketermometer med denne metoden også. Kjernetemperaturen skal være den samme – 55 grader.

Ingredienser

  • 800 gr torskefilet
  • 2 ss salt
  • 50+50 gr smør
  • 1 ss hvetemel
  • 1/2 sitron, saft og skall
  • 2 dl vann
  • salt og pepper
  • finhakket persille
  • poteter til 4 personer

Fremgangsmåte

  • Sett på potetene
  • Skjær torsken i porsjonsstykker og dryss over alt saltet. La det stå i 10 minutter.
  • Riv det gule skallet av 1/2 sitron og klem ut saften.
  • I mens lag sausen ved å smelte 50 gr smør i en gryte. Rør inn hvetemelet. Tilsett vannet og rør med en visp til det er helt jevnt og uten klumper. Tilsett sitronsaft og -skall og la det koke noen minutter til melsmaken er borte. Rør inn de siste 50 gr. med smør i 4 omganger. Hold sausen varm til resten er ferdig.
  • Sett dampovnen på 100 grader og 100 % damp.
  • Skyll torskestykkene fri for salt og sett dem inn i dampovnen. Stikk inn et steketermometer. Torsken er ferdig når den har 55 grader.
  • Skrell potetene og rull dem i finhakket persille.

Server straks, og gjerne med en frisk salat ved siden av. Vel bekomme!

Gleder meg til å prøve denne i dag, veldig glad for å finne oppskrifter til Dampovn. Jeg har også en brokkoli som må brukes, skal ta den sammen med torsken i dampovnen tenkte jeg 🙂
