I dag er det fredag og pizzadag hjemme hos oss. Her har jeg laget en hvit pizza eller pizza bianca med potet og røkelaks om du vil. Har du noen gang tenkt på at pizza er den perfekte måten å spise opp rester på? Det er jo nesten ingen grenser for hva som kan legges på en pizza. Alt av osterester kan brukes og nesten alt kjøttpålegg er fint å bruke. Mange grønnsaker gjør seg også godt.

Noen kalde poteter lå i kjøleskapet og en liten rest med røkelaks lå igjen etter julen. Dessuten hadde jeg en halv pakke med snøfrisk som jeg blandet sammen med creme fraiche til pizzasausen. Dette ble en kjempegod kombinasjon som absolutt kan anbefales. Når jeg lager pizza med fisk, liker jeg ikke å bruke så mye ost. Det fikk derfor holde med snøfrisken i den hvite sausen og bare litt Jarlsberg på toppen.  Er du av de som liker mye ost på pizzaen, er det jo bare å kjøre på. Denne pizzaen kan også helt fint stå på egne ben uten røkelaks om du ønsker en vegetarvariant.

Ingredienser

  • 10 dl hvetemel
  • 4 dl vann
  • 4 ss olivenolje
  • 50 gr gjær, erstatt evt. gjær med 200 gr surdeigsstarter
  • 1 ts salt
  • 1 boks creme fraîche
  • 1/2 boks Snøfrisk naturell
  • 1 ts hvitvinseddik
  • 1 fedd hvitløk
  • nykvernet pepper og salt
  • 8 små, koke pteter i skiver
  • 2 ss kapers
  • 1/2 rødløk i tynne skiver
  • Jarlsbergost, revet
  • røkelaks
  • ruccolasalat
  • 2 vårløk i skiver

Fremgangsmåte

  • Ha hvetemel og salt i en bolle. Smuldre gjæren oppi bollen. Tilsett vann og olivenolje. Elt deigen lenge. Det er lettere med en kjøkkenmaskin. La den gå i 10 minutter.
  • Bruker du surdeigsstarter, blander du starteren ut i vannet og tilsetter dette i det tørre. Elt deigen like lenge.
  • Sett deigen til heving til deigen har blitt dobbelt så stor. Del deigen i 4 emner.
  • Bland creme fraîche, hvitvinseddik, oregano, most hvitløk, salt og pepper i en liten bolle og sett til side.
  • Kjevle ut de fire deigemner.
  • Smør creme fraich sausen utover og legg på poteter, kapers og løk. Dryss over Jarlsbergosten.
  • Stek pizzaen på grillen, på pizzastein, eller i så varm ovn som mulig (250 grader).
  • Legg på røkelaks, vårløk og ruccola rett før servering.
