Har du det som mange andre, skulle kanskje gjerne midjen blitt litt smalere og lommeboken litt tykkere nå i januar. Da kan denne suppen kanskje være en del av løsningen. Potet og purresuppe er ikke bare velsmakende, men også usedvanlig billig mat og ikke spesielt fetende heller. Denne kan du trygt ty til dersom det å gå inn på kontoen i nettbanken gir et like stort ekko som en tom gymsal.

Det som er ekstra fint med denne suppen er at den kan «pimpes» opp på så mange forskjellige måter. I stedet for å dryppe over olivenolje til slutt, kan du bruke chiliolje, trøffelolje eller en hvilken som helst annen olje du liker smaken på. Det er også godt å servere suppen med en skive parmaskinke oppi, eller kanskje noen reker? Dersom det er krønsj du er ute etter, kan du jo bruke krutonger, eller hva med noen flak potetgull.

Med noen enkle justeringer er plutselig suppen ikke så hverdagslig lengre. Da kan den faktisk fint gå som en forrett i en selskapsmeny. På bildet nedenfor er den med trøffelolje og parmaskinke.

Ingredienser

  • 2 middels store purrer
  • 2 bakepoteter
  • 1 l vann
  • 1 ts salt
  • 2 dl kremfløte

Fremgangsmåte

  • Rens purrene og skjær det hvite og lysegrønne i mindre biter.
  • Skrell potetene og skjær i terninger.
  • Kok opp vannet og ha oppi grønnsakene og saltet.
  • La det småkoke i ca. 25 minutter til potetene er helt kokte.
  • Ha suppen i en blender eller bruk en stavmixer til å mose suppen helt glatt.
  • Tilsett fløten, rør rundt og varm suppen opp til kokepunktet.
  • Juster evt. med mer salt om nødvendig.

Server rykende varm med tynne purreringer og litt olivenolje. Det er også godt med en skive parmaskinke oppi. Server gjerne brød ved siden av.
